Sophie's Zucchini Bread
I have been using this recipe since 2001 and I love it! I omit the walnuts (most people I share this with are not a fan), make sure to lightly squeeze the zucchini before mixing it in, and sub 1/2 applesauce/1/2 oil instead of the full amount of oil. Fantastic!
