About this Cook
I really enjoy the outdoors and live in the perfect place to get the most out of each season. I also love travel and find it inspirational in many parts of my life but especially cooking.
My favorite things to cook
Spanish and Cuban dishes, I am trying to learn to cook Indian entrees. For convenience I also use the slow cooker a lot in the winter time, it's nice coming home to a ready hot meal.
My favorite family cooking traditions
Enormous ceasar salads, wild game brought home in the fall.
My cooking triumphs
The most well received item I ever served to guests was a modified Jamaican pasty (I got the recipe off of this site).
My cooking tragedies
I have trouble cooking anything flat. Seriously. Whether it is a naan bread, mexican tortillas or pita bread (even sometimes pancakes) if it is flat I have trouble which is too bad since I really want to make good tortillas.

Cold Szechuan Noodles and Shredded Vegetables
I have made this twice now, I think it is a perfect dinner dish for a really hot day. The dressing complements the earthiness of the soba noodles.

Spinach Salad with Pepper Jelly Dressing
This was really pretty good. I was just trying to find a way to use up some pepper jelly and was really pleasantly surprised by this, the texture of the cheese and nuts adds a lot.

T's Sweet Potato Fries
I made these tonight for the first time and they went really, really well. I didn't have any lemon pepper so I sprinkled about a teaspoon of lemon juice on the fries. Also, they weren't very crispy which is okay, I didn't really want them to be. I will definitely make these again, next time I will try with the lemon pepper suggested.
