Irish Cream Bundt Cake

I wanted to make an easy dessert to bring over to my in-laws' house for Easter dinner. This recipe really fit the bill - it was really rich and tasty, and everyone loved it! I'll definitely be making it again! I just drizzled the glaze over the top after poking holes in the cake - it was too sticky to brush on. Yum!

These cookies ROCK! I used some vanilla that my aunt brought back from the Dominican Republic, which gave the cookies amazing flavor. I'll definitely make these again!

Flank Steak with Garlic Wine Sauce

This flank steak recipe was really tasty. The kitchen got pretty smoky from searing the meat with no fat in the pan. The sauce didn't take as long to reduce as it seems like it took for some other reviewers.

This was kind of tricky to make. The dates are messy to stuff, and the next time I make them, I'll put them onto a dish lined with wax paper so that they don't stick so bad. These don't look too pretty, but they're very tasty.

Trinidad Stewed Chicken

This is pretty easy to put together, and it's very tasty. It has a very unique flavor, and the way it cooks leaves it to almost have a BBQ glazed taste. The coconut milk is really great in this dish - I couldn't imagine leaving it out!

Chewy Coconut Cookies

These cookies are so good! They almost taste like oatmeal for some reason. They're really chewy and coconutty, and you can't eat just one. I sent some in to work with my husband, and his coworkers devoured them. I'll definitely be making these again!

To Die For Blueberry Muffins

These are fantastic! They have great flavor, and are super moist. The only thing I'd change next time is to make 12 normal sized muffins out of the batter. They got too messy to remove from my pan, and I had enough crumb topping to go on 12. The topping gets soggy after a day or two, so keep that in mind, too.

Strawberry Muffins

These are wonderful! I didn't realize that I didn't have enough flour until about halfway in, so I ended up using 1 1/4 cups white flour and 1/2 cup whole wheat flour. They turned out really awesome! I'd use the whole wheat flour again, too! The strawberries melt into the muffins and it tastes like little pockets of strawberry jam inside. Yum!

Beer and Brown Sugar Steak Marinade

This is by far the best marinade we've had for grilling, and we keep coming back to it whenever the weather is nice. We used mesquite wood chips in with the charcoal, and Penzey's 4/S Smoked Seasoned Salt the last time we made it. It turned out better than ever! It's great, too, because it doesn't need much time to marinade.

Whole Wheat Blueberry Pancakes

We made these pancakes and they didn't work out right at all. Our whole wheat flour was too large to sift, and the texture of straight whole wheat flour just isn't very good. We wouldn't make these again - they were pretty hard to eat.

Margarita Cake

This recipe ROCKS! It kinda made me feel like Sandra Lee - using mixes - but hey...it was amazing! I noticed in the reviews that not many people could find an orange cake mix, and neither could I, so I substituted a lemon one. I added some lime zest on top and it was good to go. It was a huge hit! I've made it twice and loved it both times.

One Bowl Brownies

We wanted something sweet after dinner, but didn't want to make a huge mess, so I did a search for a "one bowl" type of dessert. This one was super easy, and we had all of the ingredients on hand. I still think that brownies from a mix are the best, but this really makes a good, rich brownie. I only baked it for 27 minutes, because we love our brownies severely underbaked. Yum!

Ricotta Cheese Cookies

t was my first time making ricotta cookies, and wow - they were a huge hit! This recipe is really easy, and it makes a lot of cookies. And be forewarned - the Italian in-laws might just snatch up the leftover cookies after dinner and give your Tupperware container back completely empty!

Best Egg Rolls

They were really easy to put together (they just look like they'd be complicated to make!) and they were delicious! I totally forgot to put in the garlic powder, so I can only imagine it'd make them even better. I used grapeseed oil and deep fried them, and they were done in a snap! We dipped them in duck sauce and dug right in!

Kung Pao Chicken

This recipe was really simple and tasty. Go shy on the chili paste if you're sensitive to heat - this was right at my threshold - but my husband was piling more on his plate! It's easier to add more heat at the end if you want to bump it up even more.
