About this Cook
I come from a long line of great cooks...and great eaters! Coming from an Irish/Italian household means there is never a shortage of scrumptious homecooked meals. The center of the house is, of course- the kitchen! My mother and Grandmother are my biggest inspiration for homecooking.
My favorite things to cook
Italian, Gourmet, Indian, Asian, Seafood, homemade chocolate candies, etc. ..well, just about everything!
My favorite family cooking traditions
Christmas is by far my most favorite cooking holiday. My family plans/cooks for days in advance. We have a huge family, and when we get together each of us brings a dish. The feast keeps getting bigger and better every year! Oh, and Christmas is homemade chocolate candymaking time!
My cooking triumphs
Homemade sponge candy! Finally after years of making it with my parents; I can make a pretty good batch myself. Red sauce from scratch, and chili...2 dishes I learned and mastered from a young age.
My cooking tragedies
Ummm...most of my baking from scratch. If the mix doesn't come from a box chances are that it won't turn out right. I don't know what it is..perhaps my refusal to follow a recipe to the letter? I always change things up, delete something, substitute something. Great experiments... but mostly not so edible!

Shrimp with Snow Peas
Great light tasting recipe! I added 2 cloves of fresh minced garlic (I pretty much add garlic to everything!) and it turned out great. Nice, quick, tasty, and healthy. Thanks!

Mango Chicken Curry
I modified this recipe by increasing the onion to 1 cup, 4 cloves minced garlic, 1 tbsp fresh ginger, 2 jalapeno peppers, 2 sweet peppers, 1 cup of coconut milk and the flavor was still more bland than I expected. Will make again, but will add more mango, hot peppers and definitely increase the curry powder

Spinach Quiche
I love this recipe...great starter quiche that you can add anything to! I did a few things differently with this recipe: I changed the oven temp to 375, sauteed the green onions with 3 cloves of minced garlic in 1 TBSP of butter, added salt and pepper, and mixed it all together with 2 cups of random leftover cheeses (pecorino romano, parmesan, cheddar, mozzerella) and replaced the cottage cheese with ricotta....DELICIOUS! Thank you :)
