Grandma's Gingersnap Cookies

This is almost exactly my great-grandmother's molasses cookie recipe except that hers calls for 4t molasses, 1 rounded t ginger, and 1/2t cloves. Hers also only requires that you sift the flour once. I did go ahead and sift the flour several times according to this recipe, but it was really unnecessary. The results were exactly the same as when I make my great-grandmother's cookies and only sift once.

Camotes al Horno (Baked Yams)

I have got to learn to read all the reviews before making a dish! My yam was too large so I cut it into 1 1/2" to 2" slices. I had to boil them for over 20 minutes before they were tender. I baked them as directed, but found them way underdone. Then I read the reviews. So I baked them more... and then some more. Finally I just ended up mashing and covering them with honey, sugar, cinnamon, and whipped cream. I guess I just don't like the natural flavor of yams.

Roasted Black Olive and Pearl Onion Salad

I would have given this five stars but boiling the onions in the vinegar/water stunk up my kitchen so badly that my boyfriend rejected the dish long before it was completed. The olives took much longer that stated to get shriveled. I cooked them at 300 for 20 minutes, then raised the oven to 350 and cooked them 15-20 more. The kitchen (and the rest of my apartment, for that matter) smelled so badly that I had very low expectations for the dish, but it tastes very light and fresh. It took about an hour and a half for the smell to clear. I think that next time I'll cook it when no one else is home.

Healthier Hot Legs

I am really happy with this recipe. It was so easy, healthy(ish), and delicious. I made a half batch but forgot to halve the sugar. It was still very good. I mixed the legs with a little Accent, garlic, and onion powder about three hours before cooking. I also used bacon fat to brown the chicken. My picky boyfriend gave this the thumbs-up and I'll definitely be making it again.

Broccoli Salad II

For anyone who, like me, gets it in their head to substitute the cup of mayo with a low calorie salad dressing: do not add vinegar! I was livid after spending an hour chopping, blanching, rendering, and mixing only to end up with a sour salad. Then I read some of the reviews that advised adding sugar to counterbalance the vinegar. Thank you so much for your sage advice! It's not the best salad I've ever made, but at least it's no longer the worst.

Vegetable Nuggets

I totally messed up at first and used a 14.75 oz can of creamed corn. Because of that, I had to add a cup of flour before the mix was even remotely "ballable". That works out to about four times more flour than the recipe called for. I only fried one nugget to try. I thought it was okay, but I like soft, gummy, doughy things. Others might not enjoy the texture and I certainly don't think this supplies any real sort of vegetable benefit. I'm going to try adding corn meal, salt, and sugar to the mix to try and make this into something approximating hush puppies.

Prosciutto Ravioli

Fantastic! I was excited by the idea of using won ton wrappers, but had very little faith in it actually working. It turned out wonderfully. I think the key was to boil them for only 2 minutes (as she said on the episode) versus the 4 minutes in the recipe. I also made some with a mushroom, garlic, and shallot stuffing.

Quick Chinese Chicken Salad

This recipe nailed it. It's exactly how I expect Chinese chicken salad to taste. I left out the cilantro (I'm allergic) and used slightly less soy sauce. I'm so thrilled not to have to buy those overpriced salad mix bags anymore!

Kung Pao Chicken

I made this recipe two nights in a row, once with chicken and once with strips of steak. Both times I doubled the sauce as recommended. The first time I accidentally used 2T of vinegar, so of course it turned out way too sour. The second time I used the correct amount, but still found it too sour for my taste. The problem could be that the brand of chili paste I'm using (Sambal Oelek) has more vinegar than others. Perhaps in the future I'll try again without any additional vinegar, but for now I'm burnt out on sour meat.

Chocolate Chip Pudding Cookies

I was worried that these cookies would be too cake-like, but I was wrong. Fresh out of the oven, they had this amazing texture- somewhere between cotton candy and a meringue. Once cool, they were as soft as a cookie could be without coming apart. I used pistachio pudding and white chocolate chips, no nuts, and 11 mins. in the oven. I'd probably use a different pudding next time as the pistachio flavor was almost undetectable, making the greenish color of the cookies an unappetizing mystery. But it was still obvious that this was an awesome cookie. Can't wait to try another flavor!

Beef Stroganoff III

This recipe was just fantastic! The reviewers' suggestions were really helpful- I omitted the butter, used two yellow onions (because I love onions), used half flour and half cornstarch, and added minced garlic, Worcestershire sauce and cream cheese. Chicken Lasagna II

If I think of this recipe as a casserole, I like it just fine, but I didn't think it was very lasagna-like. I used, shredded chicken breast, mushroom and garlic soup, half red and half white onion, ricotta rather than cottage cheese, and added about five cloves of minced garlic, a tablespoon of garlic Alfredo sauce mix, Romano cheese, and a bag of frozen spinach.

Glazed Apple Cookies

I forgot to add the milk to the batter when I made these cookies, but as much as they spread while baking, I'm glad I didn't. I'd like to try making muffins or bread out of this recipe. My cookies totally didn't hold together and had to be eaten with a fork. I also though that the apples (I shredded them) looked kinda weird in the finished cookies. Still, they were pretty good, especially with cinnamon added to the frosting.

The Best Zucchini Fritters Ever

I wish that this recipe gave exact amounts of salt, pepper, garlic, and onion powder. I only fried a little bit of the batter the first time I made these and I thought they were a bit bland, very much like latkes, as others have observed. When I added more salt, seasoning, and Romano to the batter, they were much better. Other changes I made were to use 1C flour and 1C cornmeal, only 1/2C milk, and I fried them in vegetable oil the second time which cooked more evenly than the shortening I used at first.

Meaty Spaghetti Sauce

I should have taken the name "Meaty" more seriously. This ended up tasting like ground beef with tomato paste. I like my sauce very savory and zesty (I usually use bacon), and the hot Italian sausage I used was undetectable amid all the ground beef. My bad for not taking the name seriously!

Italian Sausage Soup

This was pretty good, but I didn't love it. Something about the fatty sausage in a non-cream-based liquid didn't work for me. It did have a good flavor, so I'd recommend it for others who don't mind the sausage/broth pairing. If I make it again, I'll add another can of beans and try using frozen spinach.

Spaghetti Carbonara II

I'm so happy to find this recipe. So many carbonara recipes are too saucy, like an alfredo with bacon. This one was just perfect. I like it with extra bacon and I like to double the parsley and add it with the Parmesan for color.

Delicious Ham and Potato Soup

This recipe was indeed delicious and had a really professional looking result. I used turkey ham and skim milk to make it a little less fattening, and didn't add any extra salt. I'll definitely be making this again.

Chicken Tortilla Soup V

I agree with other reviewers that this recipe was a bit vague, but when I followed their advice it turned out great. I boiled the chicken first with a couple cloves of garlic, then shredded it. I used Embassa brand salsa. I also used 1 tsp taco seasoning rather than chili powder and cumin, which I did not have. I also used 3/4 C yellow onion and 1/4 C red onion, and bullion rather than broth. I don't know if that made any difference, it's just what I had on hand. The result was fantastic, one of the best tortilla soups I've had.

French Onion Soup Gratinee

I really loved this recipe. The only thing I'll do differently next time will to be to save some of the onions to add part-way through the cooking time, since I'd like to have some al dente pieces.
