Tortilla Rollups IV

This was sooo easy and good. You can't make it right before you need it though. Tried making it last minute, and the roll-ups didn't work. I ended up bringing it to the party as a dip with pretzels which was also amazing. It tasted awesome with the tortillas, but I couldn't get them to roll and cut. I think you have to prepare them, let them sit for a few hours to soften the shells, and then cut them. Will Make again! Very addicting.

Tater Tot Casserole III

A good weekday supper. I followed the suggestions of other reviewers and added a can of tomato sauce. My husband came home much earlier than expected, so to speed things along. I mixed everything for the sauce in the pan on the stovetop, got it warm quickly, microwaved the tator tots til warm. Added the tots on top and threw in a 450 degree oven until they got a little crunchy. A good recipe, but a little salty for me, but I like no salt. Will make again.

Traditional Mashed Potatoes

This is perfect. I have cooked since I was a little girl but was never able to make mashed potatoes as good as mom's, until NOW! Perfect flavor and consistency. Whipped in my kitchenaid stand mixer til smooth. The key is to use hot milk to keep it warm while mixing. Never thought I would use a recipe for mashed potatoes, but this is it!

Home-Style Brown Rice Pilaf

Just ok. Made as recipe states. I like the idea of adding all the other vegetables, but think that the flavor of this is a little off. Maybe too much garlic. But I'm pregnant and nothing tastes right. My husband threw the left overs away, so it couldn't have been good.

Baked Garlic Parmesan Chicken

just ok. I would recomend using something other than oil to coat the chicken before adding the breading to it. It made it kinda greasy, although the chicken didn't dry out at all. I started with frozen chicken breasts and baked an hour. Will use other recipe next time.

Pizza Casserole

I didn't have pepporoni in the house, and for sausage I used sausage links cut up, as that is all I had on hand. I used wheat noodles, and was a little nervous about them cooking properly, but they turned out well done, after like 45 minutes. I added green pepper, onion, and cherry tomatoes cut in half. It was pretty good, but I think next time I would decrease the pepper and onion and maybe use ground beef rather than the sausage, as it was a bit heartburn-producing.

Delicious Egg Salad for Sandwiches

I think the onions are better left out. By the next a.m. this was very very runny, and I think it's due to the eggs as I haven't had it happen without. But the flavor is great!

Apple Crumble Pie

Very good. I followed the suggestion of others and mixed the apples with the sugar, substituting half brown sugar for half of the white, and adding 1/4 c flour to coat the apples, mixing this all in a bowl and then adding it to the pie pans. For crust I used Ruth's Grandma's Pie crust from allrecpes, which is super easy and phenomenal. I baked 325 degrees for about an hour, wrapping the outter edges of the crust with cut tin foil once they were golden, to prevent them from getting too brown and dried out. The streusel on top of this pie looks and tastes amazing. Appears to be an expensive store bought pie.

Oven Fries

These were good, however I did bake them longer to get a true crisp to them. Next time I will layer the pan with tin foil, as I forgot to this time and paid the price in scrubbing. I think the sugar makes them stick much more than usual oven fries I make without the sugar. However the sugar gives them an amazing flavor. My husband loved them. I didn't add as much red pepper, as it seems like that would make really spicy fries.

St. Patrick's Day Zucchini-Oatmeal Cookies

I modified the recipe to make it a bit healthier, adding half applesauce instead of butter, adding wheat bran and flaxseed. But even as written I think these would be fabulous cookies. They are not at all green. And as other suggested use 1 c chocolate chips instead of 2. I used 2 and it was way too many. They do not spread out as all as they cook either, but 12 minutes is exactly the time they need to cook.

Bread Pudding II

A good, but very basic bread pudding recipe. I through some blueberries in with it for a kick. I think recipes with brown sugar have a better overall flavor. But it is very good.

Light and Fresh Dressing

4 stars because as written, this would be way too sweet. Cut down on the sugar for sure. I think it might be even better if the sesame seeds were toasted, as in Jamie's Cranberry Spinach Salad dressing, which is phenomenal. I used garlic and onion powder instead of the real thing, out of sheer convenience.

German Potato Pancakes

This is my grandma's recipe that I've been enjoying for years. SO good. I mix the ingredients together in my stand mixer, just for ease, and it gets a little watery, but turns out great. They did oxidize as they sat as left overs in the fridge, but not before that time. You can also make them in margarine instead of oil, if you prefer, but don't use butter, as it will burn too quickly.

Blueberry Coffee Cake

I doubled the recipe for a 9x13 pan as other suggested, used brown sugar for the streusel topping (which was very good), and blended the cream cheese in with the butter and sugar. It tastes good, but is very heavy. I'm wondering if this is because of mixing in the cream cheese. I baked it 45 minutes, and the toothpick came out clean. I used a mixture of blueberries and raspberries, which is very good.

Alyson's Broccoli Salad

I only give this a 4 because the proportions are off a bit. Made as is, it's quite bitter from the vinegar. It needs more sugar, probably close to 1/2 cup, and less vinegar, probably 2 T. The sunflower seeds are too high a dose, also. It is best when left overnight to meld flavors and to let the broccoli soften up a bit. Very good with these changes.

Brown Rice

The best brown rice recipe I have tried. I used a packet of dry onion soup mix and 1 cup of water in place of the can of onion soup, as others suggested. I forgot the worsteshire sauce, and added only about a teaspoon of basil. As far as, needing longer cooking time in the oven, I cooked it at 400 degrees for an hour, leaving it uncovered the first 15 minutes, to allow the temperature to rise quickly, then covered it to retain the moisture. I stirred occasionally. I also added a can of mushroom peices. Very good. Served with salmon and broccoli.
