Italian Beef Sandwiches

Made for a family dinner and everyone loved it. Made a few changes: used bottom round, a can of beef broth, cooked for an extra hour since I do not like rare beef. One note, I will add less red pepper flakes next time cause I had to dilute the drippings with extra broth to tone down the spicy broth for my grandson, although my husband and son loved it. Served with individual ciabatta rolls, roasted potatoes and tomato cucumber salad. Will definitely make again!!

Mango Salsa

Yummy!! Took advice and doubled the recipe to use up the produce I had, glad I did. Served on top of baked salmon and it was fantastic. Can't wait to use with homemade tortilla chips or fish tacos. Will add avocado next time. MMMMMMMMM. . . . . . . . .

Quick and Easy Fish Tacos

Was a perfect, easy meal for my husband to prepare for the 2 of us. He made a slaw of cabbage with red peppers, cilantro, onions, mango, lemon and salt. Opted for ranch dressing and added some Mexican hot sauce. Very nice quick meal. Will definitely make again. Deelish!!

Apple Sticky Buns

YUMMY!! DH loved them! It was an easy recipe, but I mistakenly put all the flour in at once, almost threw it out. Ran out of time so I had to refrigerate overnite, put out to room temp the next day. Came out wonderful! It's easier than rolling, spreading and cutting like other recipes. Thanks, great recipe! Will definitely make again.

Bean Soup

Doubled the recipe for this soup, which was very good. Kinda messed up my measurements which mostly went by my taste. Had a huge hambone with lots of meat, tried the baking soda trick, that was cool! Doubled up the veggies and added no salt, just boullion powder to taste and pepper. I made the extra to freeze for lazy days. I wouldn't have minded some tomatoes or tomato sauce but loved this soup. Served with beer bread from this site. Nice wintertime meal.

Beer Bread I

This was good, but unfortunately the flavor of the beer made for a bitter taste. Dipped in bean soup or with butter it was great, though. I used the extra sugar, put butter on top and made in 2 separate pans, still ate it up. I do not like the flavor of beer but even my beer loving husband said it was bitter. I loved the texture, though. I will make it again but use a bubbly soda next time. Great recipe for watching your pennies.

Best Toffee Ever - Super Easy

Great recipe, I found with this one I prefer my toffee as thin as possible so next time I will use 2 prepared pans and spread quickly. I still like a bit more crunch to my candy but if left in the fridge you will get best results. After a few days it's better. I had many compliments for this recipe and sent a whole bunch home to my son's girlfriend, who loved it! Great for Christmas goody gifts.

Jay's Signature Pizza Crust

Great recipe! This made enough for a nice thick crust large pizza tonight. It could easily be halved and made into 2 medium thinner crust pizzas. I added 2 tbsp. Italian seasonings for extra flavor and also precooked for about 10 minutes before adding toppings. Advice: make sure and brush with olive oil to the edge of the crust so the edges will come out softer. I will be definitely be making this again. Even though I make it by hand, it's a cinch to put together. Awesome recipe, Jay, thanks!

California Roll Salad

Great summer salad. Left out the lettuce, added extra mayo and rice wine vinegar. Then as a finishing touch I added some Mexican hot sauce called Tapatio, (any hot sauce will do), yum! With 3 inch nori squares on the side to make tiny rolls, it tasted just like a California roll. Will definitely make again for my sushi loving son.
