Awesome Slow Cooker Pot Roast

Made this for Christmas Eve dinner with a few modifications. Seared in olive oil after coating in flour and sprinkled with Lawry's seasoning salt. Added only 1/2 of the water called for and cooked on high for 9 hrs in crockpot. (I must have had a larger roast). When finally done, it had lots of gravy so when I shredded the meat it all soaked in. Family LOVED it, tons of leftovers. Daughter took some home to make nachos with it. Will definitely make this again and experiment with other ingredients just for fun. Thanks for a great recipe!

Jewish Apple Cake I

Great recipe. I used part brown sugar for this and 1/2 cup oj and 6 macintosh apples. Since I used a Bundt pan and the top would not be visible, I used the marbling effect when adding the apple mixture. Delicious, got many compliments, will make again!

Sophie's Zucchini Bread

I'm not sure what the problem was but this bread was dry. Believe it or not 1 whole cup of oil was not enough to remedy that problem. The only other different thing I did was use a large, mature squash but it was moist enough, I thought. I will not make this recipe again.

Pumpkin Puree

Used a 12-15 lb medium sized jacko-lantern pumpkin and just boiled it. Scooped out flesh and put in colander to drain and pressed down until most liquid was gone. Put into food processor and made very nice pumpkin butter and empanada filling. Put well drained pulp into freezer bags. I will not stop buying canned pumpkin but will never toss out another carving pumpkin ever again. Saves $$.

Yummy Sweet Potato Casserole

Made this the day before Thanksgiving. Substituted 1/4 cup orange juice for milk, used brown sugar instead of white in the yam mixture. YUMMY!! Husband loved it and so did I. Will definitely make every Thanksgiving from now on.

Jo's Rosemary Bread

I made this originally for bread without a machine, but ended up as a pizza crust. I ended up taking off the toppings and enjoyed the lovely, fragrant bread. We did recognize the taste as Macaroni Grill's bread, yummy. Will make next time as a loaf, it's outstanding and so easy to make, even manually. Thanks!!

Carrot Cake III

I made this for Easter and my husband said it was the best carrot cake he'd tasted. I put in half brown sugar and half white granulated to total about 1-1/2 cups. 1 extra tsp. vanilla, 1/2 tsp. more cinnamon and 1/2 tsp nutmeg and used walnuts. Since I am lactose intolerant I used "tofutti" soy cream cheese for the frosting, along with only 2 cups of sugar. It was not overly sweet, just right. That's why my dh loved it so much. Thanks for a great recipe. A keeper.

Hummus III

This was my first time making hummus, used less than 2 cups of chickpeas and less of all other ingredients except garlic. Pretty much used halved amounts of ingredients, but garlic was way too spicy for me. I will continue to experiment with adding other spices, veggies, etc., but did use the liquid drained from can to smooth out the hummus. Served with Stacy's baked multigrain pita chips. Healthy recipe.

Grilled Salmon I

Made this tonite for dinner, husband and I loved it! Made a few changes: I did use a 2.5 lb. of fish but kept the same amount of ingredients. Omitted the salt, didn't need it with soy sauce, no lemon pepper, just 2 squeezes of fresh lemon juice and next time I will try fresh garlic. Also used my skillet/grill on the stovetop and the carmelization was so tasty. Will definitely make regularly.

Downeast Maine Pumpkin Bread

Very nice bread. Stayed moist for many days and made so much so I froze some. Was able to make 1 huge loaf and 1 doz. muffins. I added heaping spoons of spices for extra flavor and used half white and half brown sugar. A friend who tasted it liked it but didn't know it was pumpkin bread, so next time I will reduce the sugar amount or use Splenda. All in all a great recipe for the holidays. Good with tea. Thanks!!

Caldo de Res (Mexican Beef Soup)

Mom made this for us growing up. I've revised using short ribs and any cut of roast on sale. Just ask the butcher to cut into stew meat. I also add celery stalks and bay leaf. Cumin is also necessary. I used wedges of cabbage at the end and zucchini squash and it turns into a robust vegetable beef soup. Don't forget the corn on the cob, I keep some in the freezer. One more tip, we sometimes serve on top of a scoop of white rice if we don't have enough soup. Deelicious

Cranberry Bars

I made these last year (Christmas) with what I had in my kitchen. They were a refreshing change from all the other rich and chocolate goodies. I made them again for Thanksgiving and received good reviews. Nice with coffee.

Easy Grilled Tri Tip

Very nice and simple, tasty recipe. Although it does not seem to make a lot it does flavor the meat adequately. Marinaded overnight and grilled, delicious! Definitely easy.

Rosemary Roasted Turkey

Very nice and moist turkey with a heavenly smell!! Mixed it up the night before and adjusted amounts for a 20 lb bird. My husband added some butter to this when rubbing the excess on top of the breast along with 1/2 cup of wine to the pan. Wonderful recipe, made excellent gravy. Yummy. This is a keeper, thanks!

Roast Sticky Chicken-Rotisserie Style

Made this on a lazy weekend. Put in the oven at noon and forgot all about it. I just had one 5 lb. chicken so I made a little more than half of the spice mix, adjusting the cayenne to my preference. Didn't have onion powder or white pepper, so I just used a bit of Lipton onion soup mix. It came out fantastic, so juicy and flavorful. I think we overcooked it cause the meat was falling off the bones. The house smelled lovely and it gave enough drippings for me to make the other half of the chicken with gravy. Yummy! How convenient. Next time, though I will lessen the baking time when making only 1 chicken. Also I will add potatoes to bake in the broth slowly, mmmmmm.. . A keeper, thanks!!

Teena's Spicy Pesto Chicken and Pasta

Made this last night for dinner, DH loved it. I knew for my own taste to only add 1 tsp. of chili paste so he added chili flakes later. I sauted mushrooms and I wish I could have added more of the bounty that I had in my fridge. I agree with the suggestion of adding white wine cause the juices seem to disappear quickly. I will be making this again and adding more veggies and using up my homemade pesto! Thanks!

Taco Salad II

I've been making this for years and NO, do not refrigerate! Please don't forget to put in at least 1 ripe avocado, cubed and black olives. The dressing I've used for years is 1 small can tomato sauce mixed with about 1/2 cup Italian dressing or to taste. Don't pour the dressing on til the last minute. It's awesome and lighter than Ranch. Leftovers get soggy, though. Try it!

Black Bean And Corn Salad II

Used 2 ears of roasted corn, left out garlic, red peppers and 1 can of beans and only 1/8 cup oil. Used lemon juice instead (no limes around), 2 chopped and seeded jalapenos, added chili powder and cumin. I found I needed to add the jalapenos and extra lemon juice for that extra zing but it was a great vegetarian meal for my DH and me. It was better the next day and since there was so much lemon juice, the avocado didn't oxidize much at all. Will definitely make again, thanks!!

Marinated Grilled Shrimp

Made this for Memorial Day, used ketchup instead of tomato sauce, dried basil and added some lemon juice. This made enough for 1 pound of tiger prawns on skewers, deveined with shell ON. Juicy!! Used the extra marinade for basting and they were excellent!! This is a keeper.
