Peanut Butter Mini Muffins
I just made these and they turned out perfect!! I added a cup of peanut butter instead of the 2/3 cup. Didn't change anything else. The recipe made exactly 24 mini muffins. I filled muffin tins to the top with the dough and they rose just over the edge and look absolutely gorgeous. Will definitely be making these again. Thanks!

Simple to make and they always turn out great. I wouldn't change a thing.

Seafood Stuffed Avocados
This was one of my favorite things to make last summer and it's finally warm enough to start making them again. I don't scoop out any of the avocado. I just spoon the mixture on top. A little sour cream or cream cheese mixed in makes it even better. I use the leftover mix to make sandwiches. Just spread on bread and toast in the oven. So good!
