German Apple Cake I

Excellent cake with an excellent texture. It is moist and dense inside with a slight crispy exterior. Great out of the oven, but still great at room temp. I did make a few minor changes to adapt to my preferences; I decreased the sugar to 1 1/2C and used brown sugar instead of white and increased the cinnamon to 3 tsp and vanilla to 2 tsp.

Tuna Noodle Casserole II

Great base. I added zucchini, grated carrots and peas. I used shredded mozzarella and parm. in the middle and on top with bread crumbs on top. It was great and easy. I will make again and try different combos.

Warm Mushroom Spread

Great spread! I halved the recipe because I didn't have enough mushrooms on hand and I didn't have enough sour cream so I added 1/4C of marscapone cheese. It turned out well. Served it on crostini. I will definitely make again.

Garden Fresh Tomato Soup

I doubled the recipe and I tried the soup as the recipe stated up until the thickening process. It tasted good enough but I decided to add some other ingredients. I found I wanted a more tomato punch so I added 2 tbsp of tomato paste. I also added some fresh basil at the end of the cooking time and a clove of garlic to the onion/tomato/broth mixture. I didn't thicken the soup I left it as it was and it was a very nice fresh soup. I gave it 4 stars only because I added other things but the soup as written is very good as well.

Torta Rustica

Great! Crust is wonderful. The possibilities of fillings is endless. I think I will try some sausage next time and leave out the ham and spinach. It is filling and can feed quite a lot of people.

Eggplant Rollatini

Very Good. I added some parmigiano regiano to the bread crumbs. Next time I will use a sausage or ground beef mixture instead of the prosciutto. It was very good with the prosciutto I will probably add some roasted red peppers next time as well. Served with rice balls instead of a pasta, great filling dinner.

Best Big, Fat, Chewy Chocolate Chip Cookie

Cookies are great! The cookies have a crispy exterior and a chewy interior and I baked for 15 minutes. I used 1/8C to make the cookies, I think 1/4C would be too big for me. I added 1 1/2 C of chocolate chips and 1/2C of pecans. Next time I will do a cup of each. They are sweet and rich and two cookies were more than enough and one would be perfect...but I would look forward to my next cookie. A great chocolate chip cookie and will go into my chocolate chip cookie rotation.

Buttery Rolls

These were excellent. Made it exact as written and the dough was beautiful. We had it fresh out of the oven with some butter. They are quick and easy. I am going to try and make these in bigger rolls for sandwiches and see how it works out. Great go to recipe!!!!

This is a great recipe. My mother made these all the time, she adds the zest of a lemon and no vanilla. Either way they are very nice, just a great memory from childhood. We would have them with a sprinkle of cinnamon or powdered sugar.

Roast Sticky Chicken-Rotisserie Style

Great chicken. We made it on a rotisserie on the BBQ. It came out great and tasted similar to the famous Portuguese Chicken you can buy at restaurants around here.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

It was good but lacking something. It needs some more depth. I added green peppers and peas. i also used pasta water and a splash of white wine. It was a good dish but will play with some spices.

Peanut Butter Sheet Cake

Great cake! I frosted it with a chocolate cream cheese icing I had left over from my bf's Banana Chocolate Truffle B'day cake. The cake was great with the chocolate cream cheese icing. The cake itself was moist and had the perfect peanut butter flavour.

Portuguese Bread French Toast

This was great! I added some chocolate chips to the layers and it turned out great. This could probably serve 8-10 people since it is so rich and heavy. Since there are only two of us, we have been reheating it and it's still great!

Mushroom Orzo

I used this recipe as a base and added some things. I didn't have pearl onions so just chopped some onions up and used chicken broth instead of water. I added some chopped roasted red peppers and chopped tomatoes. It turned out wonderful and was so fresh and a nice side dish to our pork and chicken dinner. Everyone loved it, it will definitely go into rotation.

Mom's Zucchini Bread

Excellent and easy. I did add 3 cups of zucchini and 2C of brown sugar instead of white. I also did half a cup of oil and half a cup of applesauce. I didn't have enough walnuts so I added some chocolate chips. It was moist and flavourful. Will make again.

Steakhouse Wheat Bread for the Bread Machine

This is spectacular!! My bf loves this bread and the distinct flavor. The loaf is small so I do double it sometimes but the original recipe is good for a few days lunches. I make this over and over.

Classic Bran Muffins

Great basic recipe. I just subbed applesauce for the oil and added cinnamon and nutmeg, only cause I like it. I split the recipe in half and added blueberries to one and strawberries in the other half. They were great I will definitely make again. I can added anything to them, GREAT!!
