Southwestern Egg Rolls

this was wonderful!!! I did leave out the spinach as no one in my houseld cares for it. Doubled the recipe to make 10 rolls. Then, I cooked right away on a cookie sheet. I sprayed the sheet with canola spray and then on top of the rolls after placing on the sheet. Cooked in 425 degree oven until brown. I just like to fry food a little as possible. Maybe next time I will try Pinto beans for a different flavor.

My family loved this recipe! I did change it by adding pepperoni so they weren't exactly Veggie any more. I did get a request to add more cheese next time. yum!

YUMMY!! This recipe is very good. Is is probably the best coating that I have ever tried. It browns very nicely and tastes really good. I didn't change a thing.

Beef and Noodle Bake

Easy and pretty tasty. I added about 1/2 cup chopped onions, 1 stalk celery chopped and garlic powder. Otherwise, followed recipe. I didn't find it at all dry and it fit my 13 x 19 inch pan just fine. Taking leftovers for lunch tomorrow!

Without a doubt this is probably the best Shepard's Pie I have ever made. Easy, tasty recipe and we all liked it!! Took the leftovers for lunch the next day and it still tasted good!! Think I might have to make it again some time.

Beef and Bean Chimichangas

Reviewed: Aug. 26, 2007
This was a pretty good recipe. My hubby said it tasted "authentic". My daughter said it was ok. I did change just a few minor things. I used garlic powder rather than garlic salt. For the toppings instead of lettuce I chopped up some fresh cilantro, chopped tomatoes and sour cream. Some of the other reviews mentioned that the top didn't brown as well as they like. What I did for this was for the last 3 or so minuted I turned on the broiler and it worked nicely. Just be sure to watch that it doesn't burn
