I used this recipe a little loosely (had some stuff in the fridge I wanted to use) and it turned out great.
I used 2 lbs of new potatoes (skins on) and doubled the water and bouillon while skipping the parsley (didn't have dried parsley).
I used real cheddar (old/sharp) and added a bunch of diced green onion at the end with the cheese.
