Louisiana Sweet Potato Pancakes
These were awesome. I added a little cinnamon, but otherwise followed the recipe exactly. This was a great way to use up some sweet potatoes that would have gone bad.

Pesto Pizza
I basically followed none of the instructions, but used the ingredients (for the most part). For less work, I used a pre-made pizza crust, spread the pesto, and sprinkled everything else on top. It baked up in about 7 minutes. The combination of flavors was really great.
