Butternut Squash Bisque

Wow! My husband and I both loved this bisque. It's both sweet and savory and was the perfect accompaniment to a sweet pasta dish. I pretty much followed this recipe word for word except that I baked all of the squash in the roasting pan and then pretty much omitted step three entirely. I added a few ladles full of the reserved liquid to the soup mixture before blending to give it a little bit more sweetness. To make up for leaving out step 3, I didn't blend the mixture as long in the blender leaving a bit chunkier texture. I topped it with some toasted slivered almonds. Yum! It turned out perfectly and froze beautifully. It was even better two weeks later when I pulled it out of the freezer and reheated it.

Fresh Peach Salsa

This salsa was really, really good. I would definitely recommend putting the sugar in last and tasting it before you add any sugar. I didn't need it at all because it ended up plenty sweet. I did add some salt and pepper and used some Tabasco sauce to give it a kick. It was excellent for dipping some tortilla chips in and I think it would be fantastic on chicken, beef, or fish. My husband absolutely could not stop eating this salsa. He had to tell himself to stop eating it but he couldn't. A definite keeping in my home now.

It was good. My family all commented on how yummy it was. I, on the other hand thought that it was a bit too heavy. A little like Taco Bell.

Slow Cooker Pulled Pork

Holy this was quick, easy and delicious. I used left over pork from the roast I made the night before. I just put the root beer in a skillet and cooked the left over meat in the root beer for 1.5 hours. The meat fell apart and was so tasty. I'll definitely make this when I am looking to impress someone.

Strawberry Spinach Salad I

Marinated Pork Roast

This was sooooo tasty and super easy to make. I didn't make a single change to the ingredients but I did put my roast (with all of the marinade) in a roasting pan with some potatoes and carrots and cooked the roast and vegetables in my oven at 350F for 75 minutes. Quicker and the pork steaks were the perfect texture. Cooking roasts in my crockpot tend to turn the roast into shredded pork. I heard my neighbors in the hall comment about how "something smells soooooo good!" The whole family loved how flavorful the pork was and I will definitely be making this again.

Chocolate Surprise Cupcakes

These were only Okay for me. Edible, but all of the rave reviews had my hopes up high. I personally thought that they tasted better strait out of the oven as they were nice and moist and just the perfect sweetness as written. But over night, the tops became crunchy and the crunchy tops, moist center combination was just weird. I would definitely use a whip cream, or cream cheese frosting with this next time. You definitely don't want to use a frosting that is too sweet. I used a chocolate butter cream frosting and the sweetness and flavor of the frosting was overpowering and detracted from the flavor of the cupcakes.

Creamy Chocolate Frosting

Very good and tasty! My husband and I found it very sweet. Good think I paired it with a not so sweet cupcake. I was only able to frost about 15 cupcakes though. I would double it next time just to be sure.

Fry Bread I

Very easy and quite tasty just as it is. I use this recipe to make some delicious Indian tacos with refried beans, cheese, lettuce, tomatoes, and sour cream. My family begs me to make this dish. I personally found that over working it does make the texture chewier, however, the finished product is less greasy and easier to handle so, I purposely over knead it.

Honey Ginger Carrots

Good vegetable side dish. I steamed the carrots in a steamer for 5 minutes instead of boiling them and they were perfectly tender. I think next time I'll add some more lemon juice.

This was pretty good but I agree with others that it didn't cook long enough to really flavor the pork. Next time I'll put these ingredients in my slow cooker and see what results.

Tex-Mex Rice

Very tasty and easy side dish. I substituted the green pepper and onion for a small can of diced green chilies and it was just perfect. Hubby said it was the best Mexi rice he'd ever tasted. I'd say that's a win.

Cabbage and Smoked Sausage Pasta

Tasty! But my hubby did comment on the greasiness of it. I'm sure the fact that I added about 5 slices of bacon to the mixture didn't help with the grease factor but it did make it taste yummy. Next time I'll cut the butter in half and add the olive oil after I have tossed everything together. I also added some red pepper flakes which gave it a little kick. I can't believe that I had all of the ingredients needed just laying in my kitchen

Baked Spaghetti Squash with Beef and Veggies

This was good but not great. It was definitely missing something. I won't be making this again, but if I did, I would probably use more vegetables like zucchini and maybe some carrots. I would also add more cheese and salt and use less beef.

Crusty Potato Bread

This is by far the best loaf of bread I have ever made in a machine and I have been making bread for years. The texture is perfect. Not too dense, not too airy, very soft, with a crispy crust. The flavor was perfectly buttery and slightly potatoey. I did have to add about 1/4 cup more water to get the dough to the perfect consistency but other than that, I followed this recipe to a tee. Set my bread machine for the 1.5 lb loaf and medium crustiness.

Broccoli Chicken Casserole I

A sensational hit at our house. I took others' suggestions and used an extra can of cream of chicken soup, I cooked the chicken on the stove and added two cloves of garlic, 1 tsp each of garlic salt, onion powder, minced dried onion, and italian seasonings. I also subbed the mayo for milk. I cooked the stuffing ahead of time and I stirred everything together saving half of the stuffing to sprinkle on top. If I were to change anything next time, I would use a second box of stove top stuffing. One inside the casserole and the second to top it off. Adding this to my meal rotation!
