Panna Cotta
great recipe. I used half vanilla bean half vanilla extract and both my husband and I prefered it that way. Great recipe. we served it with a raspberry puree with a bit of sugar and a squeeze of lemon, garnished with mint leaves. What a hit.

Catherine's Spicy Chicken Soup
EXCELLENT! I make a few modifications, I use less chicken (there is PLENTY of meat with 4-6 breasts) and I add several chopped carrots when I sautee the onion. I throw in a bit of crushed red pepper flakes and use fresh salsa rather than jar salsa. I use 2 cans of diced tomatoes and no whole tomatoes. I also leave out the chili beans and the sour cream. People can top it if desired. I make this in HUGE batched to freeze extars and it has been a hit with everyone who tries it.
