Split Pea Soup

Very good. The only thing I did different was use 1 quart ham water (water the ham bone was boiled in) and 1 quart chicken broth instead of just water and put in orzo pasta instead of the potato and also added 3 very healthy shakes of tabasco.

I would never want to mess with a chef's perfection, but Target's Archer Farms brand makes a sauce with habanero's and mangos if you want a short cut.

The name says it all. Best Tuna Casserole! I mixed all the grated cheese into the casserole and topped it with french fried onions. Otherwise followed the recipe exactly and wouldn't change a thing.

Yep, quick, easy & good. The only thing I did different was add 1/4 tsp. nutmeg. All alfredo should have nutmeg!

5 stars all the way! I used it to stuff into rainbow trout and will make again with other meats or just as a side dish.

Broccoli and Cauliflower Casserole

I am a butter lover so I ignored previous comments, but I am telling you that 1/2 cup of butter is to much! I would use only 1/4 cup. Other than that it was a good recipe. I used a can of cheddar cheese Campbells soup instead of the processed cheese and just used bread crumbs sprinkled on top intead of butter crackers and it still turned out wonderful. Just back off on the butter!

Meal in a Muffin Pan

Ok I only made the hash & eggs and not the corn bread so as far as the hash and eggs it did turn out and it tasted good, but for me it was just easier to fry the hash and make the eggs on the side. I didn't really see the point of the extra work.

Be Prepared Five-Bean Soup Mix

Reviewed: Nov. 14, 2007
I used this recipe as a base for my own version. I had 1 package 16 bean soup that I soaked overnight. From this recipe I used the seasonings and added it to my own beans and also 2 cans diced tomatoes and chicken broth. I must say that it was mighty tasty!

I loved it! I did double the stuffing as suggested by others and forgot to put the egg in it which didn't matter. It turned out fabulous.

Potato Klubb (Norwegian Potato Dumplings)

Reviewed: Oct. 15, 2007
These didn't turn out for me at all, but to the recipes defense I used the Simply Potatos brand of hashbrowns that are pre-packaged and that might have had something to do with it. In looking back I feel I should have used more flour as well because they just fell apart in the water. I am going to try this recipe again with "real" potatos and use my Kitchen Aid to mix in the flour so I can get more in. I was really excited to make this recipe work as I remember eating these when I was a kid. OK I tried it for a second time with real potatos and followed recipe exactly. They still fell apart on me in the simmer process. Will not try this recipe again.

My turkey cutlets were thin so they came out a little tougher than I liked, but otherwise the flavor was wonderful.

5 stars!! This is going into my favorite catagory. I made it with the turkey ground (not balled) and threw all the vegetables in with it because that is how my favorite Thai place serves it. It is messy and it should be that way! Thank you for a great recipe!

Cashew Chicken Casserole

Reviewed: Sep. 23, 2007
I had a hard time rating this one. I made it the night before because I knew we were going hiking all day and wanted something to throw into the oven when we got home so by the time we were showered up supper would be ready. It did cook in the exact time it said it would and the preperation was really easy. My problem is the lack of taste. It had great texture and it was good, but not fabulous. I did use turkey instead of chicken and fat free soups, but I doubt that made that great of difference. I will make it again because it was easy and hot and filling when I needed it to be, but next time I will add some thyme for just some flavor. 5 stars because husband LOVED it :)

Turkey Cabbage Rolls

Reviewed: Sep. 12, 2007
Great texture! I did not have a problem with it not being saucey enough, but I ate it with a spinach salad instead of mashed potatos so I did not need to have "gravy" for that. The only reason this did not get 5 stars is because it is very bland if prepared exactly as the recipe states. You will definately need to spice your turkey meat to your liking.

This is a man's dish (and a woman's too), but I was reading other comments and it was true for my husband as well. He just devoured it. If you thought it was to mushy I would say you did not cook it long enough.
