I am originally from a small town in North Louisiana. My husband and I recently moved to California to pursuit his flight career in the Marine Corps. I am a Speech Language Pathologist, but am currently staying home with our little one.
My favorite things to cook
I love to cook things we always ate growing up. My mom is the best cook in the world, so I try to replicate her style! I also enjoy trying new recipes because we get tired of eating the same things all the time!
My cooking triumphs
Recently I threw a meal together with what I had on hand. After the meal, my husband looked at me and said "That was the best meal you have ever made me." Talk about a good feeling! If that's not a triumph, I don't know what it!
My cooking tragedies
I once found a recipe for lasagna. I thought it would be wonderful, but I was wrong. It had NO flavor! That day, I learned that not all recipes in cookbooks are good ones!

Mendocino Chicken Salad
I love this recipe! I usually use a whole rotisserie chicken from the grocery store and adjust ingredients accordingly (minus celery bc I'm not that fond of it). This chicken salad is good alone or in a sandwich. Something about the basil and smoky-ness of the chicken is soooo good! I've shared this with other people, and everyone agrees that this is a winner! I will continue to make this over and over again!

Artichoke and Sun-dried Tomato Chicken
I have made this dish several times and we really enjoy it. It is super easy to make and I usually only tweak it a bit. It's also good with pasta!

Southwest Stew
This soup was super easy to make and very good! I added an extra can of rotel tomatoes to spice it up a little more for my husband, but followed the recipe exactly other than that. I will make this stew again!
