Stuffed Green Peppers I
This was delicious! I did make a few changes based on other reviews. I used a can of diced tomatoes instead of the whole tomatoes. I didn't bother boiling the peppers ahead of time. I also cooked the rice separately and then added it to the skillet at the end to warm it up and mix the flavors. I doubled the Worcestershire sauce and cheese amounts. I cut the peppers in half length-wise, laid them in a baking dish and stuffed them that way. I used tomato sauce rather than the soup and layered the sauce and beef/rice mixture when stuffing the peppers. I poured extra sauce and cheese over the peppers then baked for 40 minutes.

Chicken and Corn Chowder with Thyme
Delicious and easy! I modified this a bit to suit my tastes. I added finely diced celery and carrots to the onion. I substituted 1 cup of milk and 1 cup of half and half for the 2 cups of half and half. I found it needed to be thickened up with a little cornstarch mixed with water. I also added a can of creamed corn. Will definitely be making this again!

Filet Mignon with Rich Balsamic Glaze
Love this simple filet recipe! I followed the advice of others and took the steak out when cooked to my taste and then cooked down the balsamic glaze until it thickened. Yummy!
