About this Cook
I had no idea to make mac-n-cheese until I got married 7yrs ago. Since then I realized I have a real knack for creating my own recipes & improving on those I have made in past. I love extremely SPICY foods and one day will enter a pepper eating contest! My husband and I have attended several hot sauce festivals and have yet to find one that blows my mind. I am a crisis counselor and am a first year graduate student. I love psychology and science and I feel I have a natural talent for cooking because recipes are essentually formulas! I have not opened my Betty Crocker cook book in a year-it is not stimulating enough for me and that is why I love All Recipes!
My favorite things to cook
VEGETARIAN FOOD, HOME MADE SALSA, TEX-MEX & AUTHENTIC MEXICAN FOOD.
My favorite family cooking traditions
MY FAMILY HOLDS AN ANNUAL 'WOOD & WILD GAME COOK OFF' WHERE EVERYONE HAS TO COOK WITH DUTCH OVENS & START THEIR OWN FIRE. WE HAVE DESSERT, STEAK, AND MAIN DISH CATEGORIES. ALL THE MAIN DISHES & STEAKS HAVE TO BE WILD GAME AND CANNOT BE PURCHASED AT STORE. IF YOU ARE NOT A HUNTER(WHICH I AM NOT!) THE MEAT CAN BE GIVEN TO YOU FROM A FRIEND-JUST NOT STORE BOUGHT! THE COMPETITION IS INVITE ONLY AND PROFESSIONAL JUDGES ARE BROUGHT IN. WE HAVE TROPHIES FOR EVERY CATEGORY AND THEN AUCTION THE DISHES OFF! AFTER WE ALL EAT, WE HAVE A BAND & EVERYONE DANCES & CAMPS OUT AT MY PARENTS COUNTRY HOME! GREAT TIMES!
My cooking triumphs
PREPARING FROM SCRATCH A MEAL & APPETIZERS FOR 40+ PEOPLE & I NEVER BROKE A SWEAT!
My cooking tragedies
WHEN I WAS 16 I ATTEMPTED TO MAKE KRAFT MAC & CHEESE. DUNNO WHAT HAPPENED, IT TURNED OUT TO BE CHEESE SOUP WITH MACARONI! HOW FAR I HAVE COME!

Chuck's Favorite Mac and Cheese
I like my mac 'n cheese gooey and with the amount of bread crumbs called for it turned out a bit dry. We used more cheddar cheese to try and compensate but still not as good as other mac 'n cheese recipes I have. If I do make again it will be one of the versions other members posted.

Chicken Flautas
I am putting together a Tex-Mex dinner for Christmas Eve and wanted to try out this recipe to see how it would fare. First, the amount of oil does need to be increased so take the advice other members gave. Second, the chicken mixture is soo simple to mix and tastes great...easily adjusted for spicier tastes. Third, I allowed them to cool about 10min and cut them in halves and they maintained their shape beautifully. We are going to serve them stacked this way with dips for our guests. A perfect recipe for hostesses short on time!

Not Your Average Grilled Chicken
Only okay. I was not impressed with the sour cream mixture...it was just too bland. The directions for removing the back bone were great and easy as I had not done this before. Would cook this way again but only with a different seasoning mixture.
