Salmon chili - don't ask! I wouldn't even eat it. My husband dutifully made it through 2 bowls. Don't ask me how. It was terrible!

Christmas Broccoli Salad
My family really enjoyed this recipe. I substituted bacon flavored soy bits for the bacon and Nayonaise (soy mayo) for the mayonnaise. All in all, they couldn't tell the difference and I cut out a ton of fat and sodium!

Curried Tilapia with Mango Salsa
This is a very tasty "healthy" choice for anyone trying to eat better foods. My entire family enjoyed the flavors including my 10 and 2 year old daughters. Just a note: if you are a food processer user, don't. The salsa is much prettier if it is hand chopped. Then, you can clearly see all the colors!
