Potato Casserole

I was only making enough for 4 plus a bit of leftovers for my husbands lunch, so I cut down on the amount of soup and sour cream to half. I mixed in some mexican cheese blend that I had on hand along with some of Emerils Essence ( I prepare this spice blend rather than buying it to save money and can still use the spices for other recipes) to kick it up a notch. As with one other review I also used the Ore-Ida potatoes with peppers and onions and put the cornflakes, and some sharp cheddar cheese on top the last 15 min of cooking. To save on calories I sprayed the baking dish with pam instead of butter.

Chicken Pot Pie IX

Was okay but still needed a little more flavor. I added some garlic with the onions but will probably add some more kind of spice to the gravy mix. I also left out the peas because I don't care for the frozen kind, and my husband doesn't care for peas except fresh from the garden.

Asian Beef Skewers

Very good. I used round steak instead of the flank, and had to use ground ginger because I would never have had used all of the fresh. I also served it over white rice that I cooked in chicken stock.

Jazzed Up Couscous

Used canned tomatoes with garlic and peppers, plus a little extra diced garlic. As with other viewers, I used canned chicken stock to cook the couscous. I used cheese that I had on hand rather than the pepper jack and it still turned out good.

Mongolian Beef I

Easy to prepare, but a little spicy for my taste as well as for my youngest son. My husband and eldest son loved it, but of course they love spicy food. Will make again but may tone down on the spices and let my husband and son add their own.

Baked Beef Stew

I agree with other reviews. I left out the bread, and used beef broth instead of the granules and chopped garlic.. My husband still stated that it needed more seasoning (because he likes things a little on the spicy side) Will make again.

Cuban Midnight Sandwich

Needed something quick for dinner a few weeks ago. Husband had gaming night, and eldest son had pep band. was delicious. I don't have a panini machine so I used my griddle and a cast iron skillet to flatten sandwich. Served with coleslaw and put pickle on the side.

Iowa Pork Steak

Potato and Broccoli Casserole

Made this for dinner lastnight. Did as suggested by others and cooked the potatoes first. I also used cream of mushroom soup sense I did not have any cream of broccoli on hand. I topped it with crushed ritzs crackers instead of the saltines and little dabs of butter, baked it at 375 for one hour. Served with a tossed green salad and crescent rolls. Everyone enjoyed it except for the 9 year old who doesn't care for broccoli. When asked t rate it my eldest gave it a 4 and my husband started with a 3 star but changed his mind and gave it a 4 in the end. Will make again and will think of other things to add to dish.

Fresh Strawberry Pie III

Everyone loved it! My husband was afraid that it would be overly sweet with the cup of sugar but it turned out not to be. Will make again for special occasions. A nice dessert for those hot summer days.

Grilled Roasted Red Pepper and Ham Sandwich

Fancy Potatoes

Easy to prepare. Used sharp cheddar cheese for the top. Thought about adding roasted garlic to mashed potato mixture for more flavor. Hubby also suggested sauteed mushrooms. Made for my family's traditional meatless Monday meal. Served with steamed broccoli, green salad and crescent rolls

Jamie's Minestrone

I made this for our family tradition of meatless mondays. I left out the spinach and zucchini, and instead of using 4 cups of tomato sauce, I used 2C sauce and 2C diced canned tomatoes instead. I had some mini macaroni noodles that I used in place of the shell pasta and used dried herbs that I had on hand My family liked it with the exception of my 9 year old who I have a hard time getting to eat his veggies. My husband placed a biscuit in the bottom of his bowl pouring the soup on top. Will make again in the future.

Tater Tot Casserole II

Prepared this for dinner lastnight along with steamed broccoli. My husband and oldest loved it, but my youngest just picked out the tater tots. I used roasted garlic cream of mushroom soup instead of the regular, and baked it for only 45min although my husband stated that it could have used another 5min or so.

Sloppy Joe Sandwiches

Had not had Sloppy Joe's in a long time so decided to make them last night with a tossed green salad on the side. I did add a few things that were listed in a recipe from one of my cookbooks. I put in some chopped onion ( a suggestion from the book), garlic( which was of my own choosing) and sweet bellpeppers(from the book) and sense I didn't have onion and garlic powder, I replaced with onion and garlic salt, then eliminated the regular salt. I think I will make a smaller amount with out the peppers, because my picky eater saw them and wanted just the bun with no filling.

Faux Meat Balls

Decided to try new family tradition, and serve a meatless meal once a week. Recipe was easy to put together. Baked them in the oven and then placed them into spaghetti sauce. Flavor was a bit bland so will add more seasoning and cheese. I used a 1/4 measuring cup to be sure meatballs were same size, but I think I will make them a bit small next time. Sixteen year old liked them along with my husband, but my nine year old ate the spaghetti, but not the meatballs.

Restaurant-Style Buffalo Chicken Wings

Made these for the Super Bowl party and they were a hit. I don't have a deep fryer, but I do have a non-stick large wok, so I used that instead. Easy to prepare, will make again.

Sorta Salisbury Steak
