Prime Rib

The secret is making Prime Rib for 2. Use the basics listed here on a four lb. roast...pop into a 450 degree oven, reduce heat to 350 and cook 20 minutes per pound. Let rest 15 minutes....Carve off the bone and make Prime Rib Soup with it.

Shrimp and Asparagus

OH YES!!! Had to reduce the butter way back and use a little olive oil (hubby and I both have serious health issues) and I used red/green/yellow Amish egg noodles. Added a little parsley for the color and it made a very festive Christmas eve dinner. Extremely tasty and a definite keeper!!!

Cornish Game Hens with Garlic and Rosemary

Have made this for years. Try cutting slits into the birds and inserting slices of garlic into them. Slice the lemons thinly and slide under the skin of the breast along with a few of the rosemary leaves. Will try the sauce next time...

Shrimp and Blue Cheese Dip

Didn't have sliced black olives so used chopped...end result was "tastes like heaven, looks like hell". Sliced olives are a definite for presentation! To help the appearance of my creation I added a rib of celery, diced very fine and some parsley flakes. This recipe is extremely tasty and I will make with the sliced olives next time and all the times afterwards. Thanks for sharing a great appetizer!!!!

Beer Dip I

Sorry...this was a major disappointment. It tasted like plain cream cheese and cheddar...the ranch dressing did not come through nor did any hint of the beer. I added chives, parsley and a few drops of hot sauce which improved it somewhat but will definitely not make this again.

Only change I made was to delete the sugar and it was totally awesome. The sugar probably wouldn't make a lot of difference...I just don't like sweet.

Elena's Linguini with Clam Sauce

OH WOW!!!! I never make a recipe without tweaking and the only change I made was to substitute angel hair pasta 'cause hubby's stroke makes linguini and spaghetti harder to wind on the fork. This is absolutely fabulous just as is. Very quick, easy, and affordable. I may cut back on the butter and olive oil as suggested by the first reviewer but if cholesterol is not a problem...make it just as is for one of the best dishes ever!

Bratwurst Stew

Followed one suggestion and added a pint of homecanned tomatoes. Used venison bratwurst, browned first and grease removed and upped the garlic. Very tasty, filling and healthy. I'm glad cool weather is beginning to filter in because recipes like this one beg for a chill in the air.

Chicken with Garlic, Basil, and Parsley

Usually I think the only good thing about a chicken breast is that it holds the wing to the other tasty parts of the bird...however, this recipe has changed my mind. The meat was tender and fairly moist (will follow the advice of others and brush with olive oil next time...) and the flavors were wonderful. I added shredded mozzarella on top and will try feta next time. First class recipe!

Mung Bean Stew

Five potatoes were going to be far too much so I cut it back to two, which I thought was still a little too much. The flavor was very good but a little bland so I sprinkled just a little bit of red pepper flakes on it. Overall very healthy and good.

Broccoli Beef I

Only 3 stars as written. Second time I made I reduced sugar to 1 teaspoon, used 3 cloves of garlic minced, added 1 teaspoon of red pepper flakes and a can of straw mushrooms, drained. That brought it up to a 5 star recipe. The "sauce" of this recipe made it easy to make the changes to perfect.

Curried Deviled Eggs

I'm glad I scaled this back to 4 servings. The flavor was extremely murky with nothing shining through. I tried adding various ingredients to salvage, but gave up. Perhaps someone would like these, but not in this family...sorry.

Spicy Rapid Roast Chicken

I tried this with an almost 5 pound bird and it took a LOT longer to get rid of the pink inside. Also combined the spices with butter and rubbed inside the skin so the flavor was good, but was disappointed in the cook time and the heat it generated in the kitchen. Will revert to my standard roasting procedure.

Caron's Kickin' Quinoa Salad

Awesome, delicious, imaginative, different, flavorful...the list of adjectives goes on. This is truly a great tuna salad recipe. I cooked the quinoa traditionally, boiling vs. microwave. Because hubby and I like bold flavor, doubled the wasabi and upped the lemon a little. Absolutely incredible...makes me want to play with chicken salad with a dash of wasabi...etc. Many kudos and thanks!!!

Monte Cristo Sandwich

Have made these for years...but do not use nearly the milk called for, just a dollop. Try cutting these into quarters diagonally and serving as finger food appetizers. I've made several times for a Retirement home and the residents (and I) loved them. You can also put thin slices of dill pickle on them or tomato slices for a bit of moisture...

George's Greek Fried Chicken

Yes, oh yes!!! I used only 1/2 t. salt because we're watching our BP and one T. of Greek Seasoning (from this website) instead of the spices listed. Instead of using another half cup of olive oil for frying, used only a couple of tablespoons and added the marinade to the skillet as well. Must of been mightly good...there were no leftovers and some serious finger licking going on...

Classic Greek Spinach

Used 1/4 cup of EVOO and upped the rice to a cup. Should have cut back on the water and used only 1/2 cup of the rice. There was just too much rice for me. Hubby wouldn't try it and while I found the flavor good...would have preferred the spinach to be a little more dominant.

I used EVOO instead of the dressing with some Greek Seasoning (from this website) and it was absolutely delicious. Will try again after I get some of the Greek salad dressing to see if perfection can be improved on...

Greek Garlic-Lemon Potatoes

I didn't get the chance to do these right as someone threw a 6 week old puppy out in front of our house and I was busy debugging her. Lost track of when to stir and add water, etc. and they still turned out absolutely fabulous! Will make again next chance I get! Anyone want a cute little puppy?
