Since it is starting to get really warm weather I am exploring all of my outdoor cooking options. I hate to heat the house up by boiling, baking, etc in the kitchen. Yellow Squash Casserole
This is my fav squash cass recipe. You can really make two almost completely different dishes out of it. If you make it exactly as written you have a casserole but if you quarter the squash instead of slice and then boil it down for a while you have more of a souffle type dish. Very yummy either way!
