About this Cook
Marketing Manager turned SAHM of twin toddler boys, I find baking very therapeutic!
My favorite things to cook
Squares, cakes and oatmeal cookie variations.
My favorite family cooking traditions
Throw it all in one pot and see what you get.
My cooking triumphs
Replicating the Millionaire Squares I had while on vacation in Scotland. These are a traditional (3-layered) Scottish square and ridiculously good. I like that they are a spin off of Nanaimo Bars (a family tradition).
My cooking tragedies
At age 12, I was at a friend's house and the mother asked me to start the Kraft Dinner for ten of us to eat lunch. My mother NEVER allowed us to eat that kind of stuff so I had never made it before. I got confused and poured all five cheese packets in while the pasta was still in the water! The best part was probably when the mom freaked out and I innocently said "I don't know! My mom doesn't let us eat this kind of food!". LOL

Sweet Maple Pork Chops
Way too sweet for our liking. Followed the instructions of other reviewers and double-dipped the chops (oatmeal/cream mixture/oatmeal again) -- that worked really well. Also listened to others and reduced the cream and oil by more than half. I think next time I'd try half the maple syrup to see if that make it less sweet because pork chops should not taste like candy!!

Bell Peppers and Pasta
Very tasty dish and surprisingly hearty despite the lack of meat. I double up the peppers.
