Fresh Rhubarb Pie

Chocolate Layered Pie

Always have my family rate recipes and this one was a 9.5! Can't go wrong with the recipe. The only thing i did differently was use some graham cracker crumbs in the crust mixture and made my own whipped cream (always better than store bought). Yummy!

Garlic Teriyaki Edamame

Super Yum! I didn't have the rice vinegar or the sesame oil, but did fine without it. Substituted regular vinegar and a little olive oil. Kids loved it! Thanks for the recipe.

Buffalo Chicken Wraps

Made some modifications, I cooked the chicken in simmering salt water for about 1.5 hours, until pull apart tender. Mixed together with 4 tbl melted butter, hot sauce, and garlic powder. Kids loved it for after school snack.

Quick Clam Spaghetti

This is a great start! I added 4 tbl butter with the olive oil and sauted about 4 large garlic cloves (love the garlic). I added about 1/2 cup white wine, and let it reduce. I then substituted crab meat for the clams,since i didn't have any, and doubled the parm. Loved it!

Tuna Salad With Fresh Dill

Don't like to over modify a recipe, but this one i did. I think 1/4 cup of dill is too much. I used 1 can tuna, about 1/4 cup onion (love the onions), 1 tbl dill pickle relish, 1 tsp dill, 3 eggs, 2 tbl olive oil, mustard, and a squeeze of lemon. Super yummy and very good for you!

Potato Bacon Chowder

The reason for the 4 stars is when I think of Chowder I think of beginning with a roux. I rendered the bacon and sauted the onion and added garlic, then added flour until almost doughy and cooked for about 5 minutes or so. I then added chicken broth and cooked until thickened. Boiled the potatoes and then added them to the broth mixture. I finally added heavy cream. Yummy!

Spaghetti ala Bolognese

I have been using this recipe as my staple spaghetti recipe for a year now. I am suprised that there are not more reviews for this. I also noticed that it is hard to find in the search unless you scroll through the 100s of spaghetti recipes. The only thing i change is to use fresh basil, rosemary, parsley, fennel, and garlic and to simmer for one hour. If you make this a day ahead, it makes for a better sauce! Thanks so much for my favorite spaghetti sauce.

Rosemary Chicken with Orange-Maple Glaze

As stated by the other reviews..you need to reduce the orange sauce by 1/2. I placed orange zest and rosemary in the orange sauce to simmer, and wow what a wonderful flavor. After you grill the chicken, remove, and deglaze the pan with the thickened orange sauce. Once done, place the chicken in the sauce and simmer. Do not overcook or chicken is tough. Loved the flavor! Will definately use again.

Pumpkin Cream Cheese Muffins

This is a great recipe, especially for some of that canned pumpkin leftover from Christmas. I didn't change much but added more vanilla where called (can't go wrong with that) and I added some cloves, allspice, and nutmeg to the batter. For the streusel, the trick is to use softened butter, mush together with your hands then cut with a fork. Place the streusel in the freezer until you are ready to use it. It is much easier to work with then. Thanks for the recipe!

Easy Tuna Casserole

The recipe definately needs milk or 1/2 and 1/2 or it will turn out dry. I added about 1 cup of 1/2 and 1/2, 2 tsp minced garlic, salt and pepper and topped with parmesan cheese. Cooked covered for 35 min. It was perfect! Thanks for the recipe.

Shrimp and Crab Enchiladas

Had crab and shrimp and looking for ideas..found this recipe. Unfortunately i didn't have any of the enchilada sauce, so i made some of my own with ingredients i had available. I used 2 cans cream of celery soup, 1 tbl garlic powder, 1/2 cup sour cream, cayenne pepper, 1 can diced green chiles and 1 can diced jalapenos warmed in a pan. I pured the mixture to remove any chunks of celery or peppers. Mixed 1/3 of the mixture with crab (used imitation) and shrimp, along with cheese. Placed this mixture into tortillas, placed in a pan and topped with remaining mixture mixed with a cup of half and half and cheese. It was awesome. My husband said it was one of his favorites! Thanks for the great idea!

Chocolate Surprise Cupcakes

Yummy cupcakes! How can you go wrong with chocolate cupcakes? The only modification that i made was used orange juice in place of the water and added about a tbl of vanilla. I filled the cups about 1/3 of the way with the chocolate batter, then added the cream cheese mixture, and covered that with another 1/3 of the batter. Cooked only 20 minutes, which is plenty of time. Topped with an orange cream cheese frosting. If you can get piping bags, or just use a ziploc bag and cut a corner, you have more control placing the batter and cream cheese mixture into the cups. BTW, this recipe makes 36 cupcakes. Thanks for the recipe!

Roasted Red Pepper and Crab Soup

Loved this recipe! I changed a couple of things, used fresh basil instead of dried, added chopped onion and garlic, spooned in tomato paste to kick up the color and add a little thickener, bought canned roasted red peppers (way easier), and added a splash of sherry in the bowl before spooning in the soup. Superb!

Magic Cookie Bars I

Great recipe! I used the boxed graham cracker crumbs along with lining the bottom of the 9x13 with parchment paper, which keeps it from sticking (for those who have problems with that). I also added marshmellows to the mix as well. Turned out great!

Award Winning Soft Chocolate Chip Cookies

Ok, have been to culinary school and let me tell you. They don't teach you this kind of baking there! The secret ingredient in this recipe is the pudding mix! I have also added Andes Mint Chips to this, and OMG...can you say Happy Holidays! Take this to your next cookie exchange and you will be the definate winner. Thanks sooo much for this recipe!

Chicken and Dumplings III

I have been making this for ages. Plain and simple chicken and dumplings with no fillers. The only change is that i do add a couple of tsps of chicken bouillon to the broth and a tsp thyme. After the soup is added and i only use cream of celery, i add about a cup of heavy cream which gives it the richness that a creamy soup should have. This is the best chicken and dumpling recipe!

Honey Glazed Ham

This is an awesome start! Basically, i didn't have the dark corn syrup, so i relied on Mrs. Buttersworth (everyone has to have her in the cupboard), probably used about 1 cup. Used 1 cup of honey, same amount of butter and seasoned the sauce with ground cloves, since i didn't have the whole cloves. During the baking process, i made sure that the drippings were moist with water (not too much to overpower the drippings)and made a nice thick sauce for the ham. Fantastic! Will definately make again.
