I just made this for lunch for my husband and myself and we both LOVE it! It was so fast and easy to put together and tastes so yummy! I will definitely be making this again and again and again. I did saute the onions a couple minutes before adding them, as was suggested by others.

This pizza tasted great, but I guess baking the crushed tortilla chips on top made them harder than normal. We had to pick them off to eat the pizza, because the sharp edges of the chips hurt our mouths too much. I'll make this again, but without the crushed tortilla chips.

I was looking for a rice pudding recipe that didn't have to be baked in the oven so I tried this one. BOY, am I ever glad I did! It's even better than my baked version and so much easier! I did add 1/4 teaspoon each cinnamon and nutmeg. Even my picky eater daughter devoured this!
