Black Bean and Salsa Soup
This recipe is magnificent! As someone who's stove cringes upon my entry to the kitchen, I was wonderfully surprised to find how easy and foolproof this recipe is. Like others here, I used chicken broth instead of vegetable but that was the only modification. My toddlers gobbled it up and it even passed my mother's taste test when we met for lunch the next day!
