Absolutely love to cook. Hardly ever use a recipe - although I do browse them for ideas, but if I try to actually follow one I always end up tweaking it somehow.
I've been in the kitchen since junior high, but it wasn't till I was on my own after college that my meals really started impressing people. Now I'm working on improving my baking skills - I'm not a big dessert person, but hubby is...

Corn-Stuffed Tomatoes
Great idea! We got a ton of tomatoes from a relative and I was looking for something creative to do with them... I baked them in ramekins instead of a muffin pan so they could just be left in there; it's a good thing because they ended up with a lot of extra liquid and filling! Overall they were pretty tasty, though next time I may add a few more seasonings or maybe some cheddar cheese after they're done.

Steamed Radishes
Had some radishes to use up and no salad greens, so I gave this one a try. Turned out okay - I kind of liked them, but my husband didn't think they had enough flavor. If I try these again I will probably season them or mix with other vegetables.

Sophie's Zucchini Bread
This was my first attempt at zucchini bread, and I was pleased with the results. Because I was using only what I had on hand, I substituted 2 cups of summer squash for the zucchini - but it still came out tasting great! I did take someone else's suggestion and only bake for 53 minutes... next time I'll shorten it by a few more minutes, as it came it out a little dryer than I like. But overall I am pleased with the result... and so is my hubby! :)
