Good Old Fashioned Pancakes
I made these exactly as written and increased the recipe to 12 servings. It made exactly 12 pancakes (I used a 1/4 measure as instructed) and they were just right. Fluffy and tender. Everyone loved them! I thought the salt was a bit high when I tasted the batter, but once they were cooked and had syrup on them it was just right.

Southern Grits Casserole
Very good! I made this for a MOPS meeting and everyone was raving. I used kielbasa (browned) instead of ground pork and 10 eggs. Agree with other reviewers that the key here is seasoning and I used a fairly heavy hand, adding onion & garlic powder and Tabasco generously. I also prepared it the night before and baked the morning of so it would be hot for the meeting. I added a touch of milk before heating it up to ensure it wouldn't be dry.

Thai Tuna Burgers
These were surprisingly great! I made no changes except to add about 1/2 tsp green curry paste as others mentioned. I also think I might have accidentally used 1/2 tuna - 1/2 halibut as my freezer packs were not labeled. In any case, delicious! We served them on buns with a sambal mayo which was spicy, but not too hot. Perfect.
