Burrito Pie
This was a hit at my house. It wasn't too time consuming. I added cumin and chili powder to the meat & onion mixture along with a little salt. (I was afraid of it being too bland.) I used a bottle of red enchilada sauce as I couldn't find taco sauce. My family decided that next time we might try it in a 9x13 pan with corn tortillas. (By the time I had layered 12 full size tortillas and meat mixture to the casserole dish the final produce was a little unruly to serve.) We also decided it needed to be served with fresh chopped tomatoes, fresh chopped avocado, chopped green onions and a dollop of sour cream as garnish. Delicious. Worth a try!

Hopi Corn Stew
This recipe is a keeper! I'm always on the lookout for one-pot dishes that are healthy and satisfying. I too decided to add garlic & cumin, based on other reviews. I garnished ours with a dollop of sour cream, chopped avocado, a little fresh cilantro & a wedge of lime. The flavor was vaguely reminiscent of tortilla soup. It was flavorful, yet mild enough that my two small children raved about it and went back for seconds. I sprinkled some dried chipotle powder over the adult's portions and it was great. We've never had hominy in our home and I was pleasantly surprised by it's mild flavor and meaty texture. Delicious!

Saltimbocca alla Pollo
This recipe was great. I prepared the rolls ahead of time and it was a snap to cook once our guests arrived. I used fresh sage because I had it on hand. Be careful not to add too much salt when seasoning
