About this Cook
I am a mom of 4 children with the 5th currently still in the oven. I work full time outside of the home so finding quick and easy meals to make in 30 minutes or less is a top priority in our home. My little ones can be quite a handful sometimes and it can be quite a chore getting dinner ready if it takes much longer than half an hour to prepare.
My favorite things to cook
I love to cook anything and everything. I am always trying new things since my children can be finicky eaters. I love to play around with my baking. I try new cookies and breads all the time, trying to find the perfect way each time.
My favorite family cooking traditions
I am norwegian/german so there are many traditions in my family when it comes to cooking and baking. Beef stroganoff, german chocolate cake, lutefisk, salmon croquets, etc. But my favorite tradition is our lefse party. When my grandmother was still with us we would get a group of the women together and spend a whole day making lefse, telling stories and laughing. One of the many things I will miss about her.
My cooking triumphs
Not many triumphs yet but I do have quite a few recipes figured out to a T. My beef stroganoff is perfection I've been told and I make a fabulous potato salad. I'm begged every time a party must be had to bring the potato salad.
My cooking tragedies
There have been many. I'm 28 and have been cooking since I was 8. I have had pies that never set, miscounted cups of sugar in a cookie recipe(came out of the oven just a shell of a cookie), and have made breadsticks that could not even be bitten into without chipping teeth. But I learn from my mistakes(mostly) and try not to repeat my blunders. ALthough they are good for a fantastic laugh!

Old Fashioned Cookies
Wonderful tasting soft cut out cookie! I did have a little trouble with rolling and cutting, the dough definitely needs to be chilled in between batches. The husband and kids loved them, they made halloween cut outs and decorated with frosting and sprinkles. Very good recipe!

Easy Pistachio English Toffee Ice Box Cake
WONDERFUL!!!! This is a very old family tradition! We do it a little differently by putting the pudding on the cake then covering the pudding with the whipped topping. The crushed heath bars are a must! Someone said they didnt know what they were for....well, they're for texture, crunch and flavor. It's like asking what the chocolate chips are for in a cookie! Because they make it better! Thank you for sharing this recipe, my grandmother use to make this at every family festivity.

Chicken Lasagna IV
Very rich but very good recipe. I sauteed the onions with the chicken and added some minced garlic. Other than that I followed the recipe to a T. I would like to find a way to alter this to not be so rich. My 5 year old gobbled it up but my 3 year old wasnt fooled into thinking it was "regular" lasagna. Thanks for the recipe!
