To Die For Blueberry Muffins

These are the best blueberry muffins I've ever had or ever made and are always a hit. I usually use only half the topping and freeze the rest for next time!

Jamie's Cranberry Spinach Salad

I have been making this salad for years and people literally lick their plates. Throw ingredients in order into a mini food processor (pulsing as you go along) to whip up the dressing. By using only apple cider vinegar and leaving out the white wine vinegar, you can reduce the sugar to between 1/4 and 1/3 cup. I add sliced fresh strawberries instead of cranberries, as well as cubed avocado and mango, and a can of drained, mandarin orange pieces. I also often substitute 2 bags of assorted greens for the spinach. If toasting almonds, not necessary to add butter to pan, just brown in non-stick pan and the natural oil in the nuts will do the job. One word comes to mind when thinking of this recipe - divine!

Chicken Marsala

Didn't have real Marsala so used Marsala cooking wine instead. It didn't seem to make a difference though, the house smelled amazing and the taste was out of this world!

Tiny Tarts

These are divine! Bake in non-stick mini muffin tins and they come out easily. I put little balls of dough in each muffin cup and then use a wooden Pampered Chef tart shaper to form the tart shell. I also add 1 tbsp. of corn syrup to the filling to keep the sugar from crystallizing when tarts are baked. Have been making these to rave reviews for years.

Lower Fat Banana Bread I

Mexican Rice

Excellent flavour. I gave it a little extra kick by adding a dash of hot sauce. Also added some drained, canned corn. Went very well with fajitas.
