30-Minute Minestrone

Very good. I used pureed tomatoes as my husband is weird and doesn't like "chunky" pieces of tomoatoes. Great on a cold winter day with a nice hunk of crusty italian bread...yum!

Easy PHILLY OREO Cheesecake

Made this cheesecake for Thanksgiving for my hubby who isn't a fan of pumpking pie - it was a huge hit with everyone. It was super easy. Looks like it took a long time to prepare too :-)
