Broiled Tilapia Parmesan
This was such an easy, delicious way to cook fish! I could eat this once a week. I did take add panko bread crumbs as suggested by others, but made no other changes.

Brunch Strata
I made this for a brunch for 12 people and everyone loved it. I followed the recipe exactly, but prefer doing things ahead of time. I'd suggest cooking the vegetables and ham according to the recipe the night before, as well as preparing the bread cubes. This would make it a lot faster to prepare for a breakfast, or brunch.

A and Z Dip
Based on other comments, I substituted fresh pico de gallo for the pico de gallo seasoning. I also added garlic powder and red pepper for more zing. Also, unless you're serving extremely big eaters, this recipe makes much more than the 2 servings listed. I would say that this would make 4 - 6 servings.
