Blonde Brownie Nut Squares

Reviewed: Jan. 25, 2009
These were really wonderful and easy to make. Took a bit longer for mine to bake than the recipe called for, but my oven is on the slow side. I rarely bother with a dessert that doesn't include chocolate :0), but I will make these again and again - a great base for add-ins, too. Thanks!

Amish Breakfast Casserole

Reviewed: Dec. 25, 2008
We had this for Christmas breakfast and all really enjoyed it! I used sausage instead of bacon and the whole bag of potatoes o'brian (country style hashbrowns with red/green peppers and onion) because the store was sold out of regular hashbrowns - reduced the onion by 1/2. I also added an extra egg. The peppers smelled and tasted wonderful and looked quite festive, too! This is an awesome recipe to make ahead and refrigerate overnight. Just bake a little while longer - maybe 10 - 15 minutes. I served this with toasted cinnamon bread and fruit and it fed four hungry adults and two kids with a portion or two left over.

Mini Green Bean Casserole

Reviewed: Dec. 25, 2008
Really great for a lighter side than the traditional green bean casserole. Next time, I would use the whole 12 oz bag of frozen green beans and microwave until the sauce thickens and the beans are tender. Then, bake or broil to crisp up the onions at the end. I'll definitely make this again - a nice step up from my standard green bean recipe. Thank you!

Honey Wheat Bread I

Reviewed: Jul. 24, 2008
Let me start out by saying that I am a novice when it comes to bread making and the several recipes I have tried so far have left me resigned to buying bread at the grocery store. Not any more! This recipe was amazing. I halved the recipe to make it fit in my bread machine and put the ingredients in the pan in the order suggested by the manufacturer. I didn't have any shortening, so used melted butter instead. I used the 2.0 lb., basic loaf, light crust setting on my machine. Next time, I will try the 1.5 lb. loaf setting. Other than that, no changes necessary, but I could envision adding milled flax seeds, oats, etc. for experimentation. I will use this recipe again and again. I'm only a little embarrassed to admit that I ate nearly 1/3 of the loaf (warm, slathered with butter, drizzled with honey) in one afternoon:) BTW, my kids loved this, too! Thanks so much!

Zucchini Egg Bake

Reviewed: Jul. 24, 2008
Yum! Really great way to use the bounty of summer squash from our garden! I didn't peel the zucchini and only had fresh basil on hand. I used dried parsley and marjoram instead of fresh, and put the unbaked mixture in the fridge for a few hours beforehand. As a result, I baked a little longer than the recommended time - until the middle was not "jiggly". My family really loved all the flavors from the herbs and garlic. We didn't find it to be at all bland. Will definitely make this again! Thanks!

Brownie Mix in a Jar II

Reviewed: Jun. 21, 2008
I followed the recipe exactly as written and these brownies were HEAVENLY! Not at all dry - very moist and chocolately. I was in the market not for a gift idea, but for a brownie mix that I could prepare (several batches) ahead of time and seal in storage bags. This recipe works great! You may guess that my family loves brownies, and this is more economical than, and almost as easy as, the boxed mixes. Thanks!
