For the Love of Chicken!

I've recently moved into a new place and I finally have a kitchen all my own! I have my wonderful boyfriend and my best friend living with me now and we're having a blast.

My poor best friend though. After having my God Child she has never been able to reclaim her love of chicken! While she was pregnant chicken gave her horrible heart burn (along with other things) and she's been shaken by the experience.

Now that she's living with me and my chicken loving ways she's starting to come around to chicken once more.

Last week I made a delicious roasted chicken (my personal recipe which has been submitted to this site and has yet to be published) that everyone in the house gobbled up! I was planning on using the left overs to make some chicken pot pie soup, but we didn't have any chicken left over!

For Halloween we had a little party where we had a lot of little chicken appetizers. The buffalo wings just happened to be her favorites and she's decided that she also wants to try the slow cooker buffalo chicken sandwiches posted on this site with some french bread rolls sometime next week.

My God Child, who did not eat much chicken before because of her mother's aversion to it, has been gobbling up every dish I put in front of her! The other night she finished a whole bowl of mother-in-law chicken soup and then asked for more - she ate every bite, including the veggies. She also gobbled up two servings of easy skillet chicken a la king over some mashed potatoes.

Now that I have converted them over to chicken lovers I have plans for all kinds of tasty chicken dishes - chicken pot pies, parmesan chicken, chicken nuggets, chicken kabobs - oh the possibilities!

About Me
I'm in school and I love to read, write, and cook when I'm not feeling too tired (I work two part-time jobs, go to school at night, and have a boyfriend to take care of!).
My favorite things to cook
Right now I'm trying and making various things but here are a few dishes I'm sure to cook at least once a month: Rolled Enchilada's, Lasagna, Slow-Cooker Pot Roast, various chicken and rice recipes, and lots of pasta (because it's generally cheap!).
My favorite family cooking traditions
My grandmother has lived on a farm for most of my life, and she is the one who has taught me the basics of how to cook. She used shorting, lard, stored pig fat, farm fresh eggs, etc. in all her cooking. I like the fresh eggs part, but I find that I like to use less fat in my cooking and more healthy stuff. I still love her homemade jelly's and jams. And you can't beat her baking.
My cooking triumphs
Growing up my mother made THE WORST roast. I hated roasts. I couldn't even enjoy left over cold roast beef sandwiches like everyone else who ate roasts got to enjoy - it was just a terribly rough gross tasting piece of meat. Now, I've discovered how to make THE BEST pot roast and my boyfriend and I eat it about twice a month - with lots of left over cold roast beef sandwiches. I'm so glad I can now enjoy roast!
My cooking tragedies
My boyfriend and I rent a room from a woman in OA - Over-eaters Annon. Her vice, potatoes. My boyfriend and I love potatoes. We never get to have potatoes at home, I collect recipes on here all the time for when she's on vacation and we can use the kitchen to make all the potatoes we want! She needs to go on vacation more...
