About this Cook
I'm a working mom so I am always looking for something I can throw in the crock pot or make ahead of time.
My favorite things to cook
I love cooking Italian even though I'm Irish!
My cooking tragedies
The first time I tried to make pizza, it looked like a balloon.

The Best Meatballs
My family didn't really like these. I thought the taste was good, but the texture was way too soft. I never added water to my meatballs before, so I'm sure that had something to do with it. Otherwise, I followed the recipe exactly. I did cook them in a slower cooker on low, but they literally fell apart in the pot. If I do make them again, I will not be using all that water.

Richard and Suzanne's Famous Spaghetti Sauce
This was a really nice tasting sauce. I folled it exactly, except I didn't have stewed tomatoes. My family found it a little bit spicy, probably due to chili peppers. We sniffed our way through dinner! Next time I will omit the tomatoes with chili peppers.

Traditional Mashed Potatoes
Best mashed potatoes I ever had! I used 1/2 cup of 1/2 & 1/2 instead of milk, and used what potatoes I had - russett and red, but I left the skin on the red ones, other than that followed the recipe. I let the butter and 1/2 & 1/2 warm to room temperature while I cooked. I used an electric mixer which made them creamy with no lumps. I never used a recipe before for basic mashed potatoes and now I'm sorry I didn't.
