Spicy Sweet Potato Soup
I made a half recipe because I only had 1 sweet potato. I followed the recipe except I had to use dried ginger. I tasted it before adding the sour cream with lime zest or cilantro (didnt have any tomatoes on hand) and it was good. But with the toppings it took it over the top for me. Yum. Easy cheap and delicious.

Macaroni Salad
This went great with the ribs I made. I only made half a box of elbow macaroni but used the recipe amounts for everything else. I didn't have any celery, green pepper or olives. So I had to substitute some frozen peas and carrots and added some chopped roasted red peppers and a little garlic powder. It was wonderful. I almost threw some crumbled bacon in too, but didn't feel like cooking any. I will make this again and definitely add the olives some fresh carrots and peas -I love them. The red peppers gave it nice color too.

Classic Creamy Coleslaw
I really enjoyed this. I made as written but I only had cider vinegar so thats what I used. And I used the coleslaw mix bag from the grocery store. I scaled the recipe down for 4 people and it was perfect. Not too saucy. It definitely needs to chill in the fridge for a few hours.
