About this Cook
Unfortunately, I am a cook who has to follow a recipe to make dinner. My husband, on the other hand, can put together sauces that taste wonderful, grab things out of the cabinet and throw together a fantastic dinner. I have to plan during the day what I'm going to cook and use this website faithfully for ideas! My mother died when I was young, therefore, I never had anyone around to teach me how to cook. I raised my young sister so I had to learn to cook at an early age, so I've been in the kitchen for quite some time!
My favorite things to cook
I have to admit, I am a better baker than a cook, but the things I love to cook are anything to do with pasta, vegetables, and chicken. I love easy dishes, since I work full time and have little time to cook. I also love good slow cooker recipes. I wish I could sound more elaborate, but I'm not. I'm just a middle aged woman with little time who enjoys good, easy food!

Crispy Herb Baked Chicken
This was a good dish, but I can't help but wonder where the "herb" came from in the title when the only spice is garlic salt? Anyway, I took the advice of other readers and added some italian seasoning and a little Mrs. Dash to the garlic salt and it was very good. The aroma in the house was wonderful! I followed the rest of the recipe to a "t", the potato flakes didn't stay on as well as hoped but they were kinda crunchy, not mushy like some others stated. I made some stuffing and corn as side dishes. My DH stated this recipe is a "keeper".

Best Spanish Rice
This recipe tastes better than spanish rice you'd get at a Mexican restaurant. Didn't change a thing, don't need to change a thing and from now on, this is the only recipe I'll use for spanish rice!

Enchilada Casserole II
I did some changes to this recipe based on other reviews. First, I used corn tortillas instead of flour. Secondly, instead of the spices, I browned the meat (I only used 1 lb) in taco seasoning. I used a 15 oz can of enchilada sauce as well. I know I changed the recipe quite a bit from the original, but it suited our taste and was delicious! I also made Best Spanish Rice as a side, which is a fantastic recipe in itself.
