Quick and Easy Green Chile Chicken Enchilada Casserole

These were just okay for us. I followed recipe exactly and maybe if I do decide to make them again, I will not char the tortillas. Flavor was good, but the tortillas didn't hold up as I expected....maybe too much sauce?

Baked Ziti I

When I was planning meals for our vacation at the beach this year, I took this recipe with me. Excellent recipe! It was quick to put together and fed a crowd who all enjoyed it. I did put a little of the sauce mixture on the bottom first....my only recipe change.

No Bake Peanut Butter Pie

This is super easy to make and it's a great dessert! I ended up making the entire recipe as written but only used one over-sized deep dish graham cracker crust and ended up with a nice thick pie. I had a little filling leftover, but that's okay. I garnished with chopped peanut butter cups, Reese's chips and a drizzle of peanut butter that I made out of melted Reese's peanut butter chips with a little cream. It was almost too pretty to cut in to, but we did and enjoyed very much. Great recipe.

Grandma's Lemon Meringue Pie

I followed this recipe exactly and our pie was fantastic! It's not necessary to "tweak" this recipe at all and the meringue recipe is just fine as is. The lemon filling set-up perfectly. This will be the only lemon meringue pie recipe I will use from now on. I did watch the video for making a lemon meringue pie before attempting mine and I found that it helped. She also happened to use this recipe.

Slow Cooker Salisbury Steak

I followed this recipe with the exception of using 2 cans of the reduced fat/sodium cream of chicken soup and adding some sliced sauteed onions. Our family did not find it too salty at all and we enjoyed the meal very much with some mashed potatoes, green beans and dinner rolls. I will definitely be making this recipe again in the future.

Barbeque Chicken

I made the recipe as written except using a whole cut-up chicken instead of just thighs. I have some white meat only eaters in my house. I liked the sauce and the chicken was fall-off-the-bone tender. I will hang on to the recipe and will probably make again when I'm hungry for bbq chicken and it's not grilling weather.

Shrimp Scampi Bake

Very good recipe. I really enjoyed the Dijon in it. I did follow ingredients exactly except cut in half as I only prepared one pound of shrimp. There are just two of us. I served over linguini.

Enchilada Casserole III

Loved this recipe! I did substitue 2 cans of medium enchilada sauce instead of the dry mix w/tomato paste as I could not find it at my grocery store. I also added some cumin to the seasonings while browning the ground beef. I served with mexican rice and some shredded lettuce & diced tomato. I also like a dollop of sour cream on mine although husband does not. I'll be making this again this evening for my son at his place. After giving him a piece to take to his work for lunch he phoned me to tell me that "it's bangin'", lol!

Classic Tiramisu

I can't tell you how long my Mother has been bugging me to make her Tiramisu and I've always told her no, that it would be too hard to make. Was I wrong! This recipe is wonderful and not so hard to make after all. I did find the soft lady fingers at Wegmans and didn't have to split them in half as they are already split. I used a mix of coffee liquor and some of our morning coffee that I had saved (although I did forget to brush the 2nd layer of lady fingers). I also used the mascarpone substitute from this site. It was wonderful and a big hit with my family, my Mother especially! Needless to say, she got to keep the leftovers :-)

Sparkling Holiday Jam

Very easy recipe to follow and I hadn't made any kind of jelly/jam since I was in Home Economics class in high school so I wasn't sure how it was going to turn out. I did use frozen strawberries in place of the fresh and used fresh cranberries. I gave jars away to family and girls in the office at Christmas.

Awesome Slow Cooker Pot Roast

After having this recipe in my recipe box for quite some time, I made it for our Sunday dinner yesterday and I'm glad I did! I did substitute low salt beef broth for the water and I did brown the roast before putting it in the slow cooker, although it's not necessary. Our roast was very moist and tender. I put a couple of handfuls of quartered fresh mushrooms in during the last half our for my own personal preference. This made plenty of gravy and I didn't find it necessary to thicken it at all.

Slow Cooker Chicken and Dumplings

Made this on a bitter cold day and glad I did....perfect comfort food! I did substitute one can crm. of celery instead of 2 crm of chicken. I seasoned the chicken/soup mixture with garlic salt, pepper, parsley and poultry seasoning. I also added some diced celery w/the leafy top and a small bay leaf. I used chicken broth in place of the water (2 cans worked for my slow cooker). When chicken was done I added 2 handfuls of frozen peas & carrots and then topped with the biscuit pieces. I do agree that you need to cook this longer than 30 mins. I cooked mine an additional hour after adding the biscuit pieces. This is a keeper and stays in my winter rotation!

Chicken Milano

We thought this recipe was delicious. I prepared the recipe with the ingredients as written and took the suggestion of another reviewer and just prepared the chicken & sauce using one pan. I first cooked the chicken, removed to a platter and covered w/foil to keep warm. I then poured off the fat and made the sauce in the same pan using all chicken broth at once, etc. I did not find it necessary to double the sauce or thicken it in any way. It thickens itself with the cream as it reduces and we found that there was plenty of sauce for four servings. It is not the intent of this recipe to be oozing in sauce. The sun dried tomatoes just made this recipe for me....so deliciously sweet. I will definitely be making this one again and would not hesitate to make this for guests.

Super Sausage Gravy

I made this Christmas Eve and then warmed up for our annual Christmas morning breakfast. I think it was even better the next day. I scaled the recipe for 6, but left the sausage at 1 lb. Let me just say that this was a big hit and it's now going to be a permanent in my recipe box!

Cranberry Orange Cookies

I made these cookies for the first time this weekend following the recipe exactly. I used my food processor to chop the cranberries. Based on other reviews, I decided to try a cookie before frosting them and decided to just put a drizzle of the frosting on them instead of frosting the whole top of the cookie by putting the glaze in a plastic sandwich bag and then I cut a little piece off the corner of the bag....worked perfectly. I'll definitely be adding this cookie to my recipe list every year!

Pecan-Crusted Pork with Pumpkin Butter

This was delicious. I prepared exactly as the recipe is written although my pork chops were slightly thicker so I browned the first side, flipped them and slid the pan in the oven to finish. The pumpkin butter is amazing and I'm sure I'll find other uses for that as the recipe does make quite a bit.
