This is a great recipe, and really convenient, because you don't have to lei it to sit overnight, you can just throw it together and put it in the oven. I use the southwestern style hash browns that come already thawed, that way you don't have to add the spices.

Potato and Jalapeno Gratin

This is an awesome recipe that my wife and I enjoy regularly. Some modifications you can use include mixing a little Parmesan cheese in with the Gruyere. I have also substituted grated swiss for the Gruyere. If you are worried about it being too spicy, don't, because if you de-seed and cut the membrane out of the Jalapeno, it cuts out most of the heat, and you just get a ton of flavor. Enjoy this recipe.

Bubba's Jambalaya

I've made this several times and found it enjoyable every time. A few suggestions for those who think there's too many tomatoes: Add one can diced tomatoes, and one can Rotel, it cuts down on the tangy-ness and adds an extra "kick".

Creamy Au Gratin Potatoes

This is good recipe that I made a few minor changes to. The first change that I made was to dice the onions instead of cutting them into rings. The second change I made was to add diced Jalapenos. Before you judge let me explain. If you d-seed and d-membrane the Jalapenos, it cuts the heat factor way down and adds an awesome flavor. I got the idea from a dish that is served at a local steakhouse. Other than those two changes I made them according to the recipe. Highly recommended.

Debdoozie's Blue Ribbon Chili

Excellent recipe for "easy" chili. I only used half the beef. and I also added an extra half teaspoon of chili powder, as well as about eight dashes of franks hot sauce...Awesome

Thai Chicken Curry in Coconut Milk

This was delicious. I had to make some changes because I didn't have any lemons. instead of lemon juice I used a touch of lime juice and I skipped the Zest altogether. I'm not a big fan of cilantro so I substituted fresh Basil. I highly recommend the basil. Also as others suggested I used a little over twice the amount of red curry paste. When I was tasting during the cooking process it tasted like it was missing something so I added a little garlic powder. I will definately make this again.

Burrito Pie

This was a good one but I don't know how you were able to stuff all the ingrediants into one skillet. I thought the taco sauce instead of taco seasoning was a delicious touch. I spiced mine up by using the Hot style Rotel. Another interesting thing about this recipe is that the leftovers were better than when it first came out of the oven. I didn't use as many tortilla layers as the recipe recommended because I thought it would be too much but I was wrong. My dish actually would have been better had i put another layer of tortillas.

Best Fried Green Tomatoes

This was o.k. I grew up eating FGT at the original Whistle Stop Cafe. (The one from the book and movie.) I was looking for something along those lines(no cornmeal based batter). but these were ok.

Yummy Cube Steaks

I took the advice of some other reviewers and spiced this dish up a bit. Instead of just the regular diced tomatoes, I used the Del Monte brand with Garlic and Onions. I used the alloted amount of Italian seasoning and this dish turned out AMAZING! Served with some fried green tomatoes, I almost want to say that this was the perfect dish!

Chicken Pasta - Shannon Style

I cooked this for my fiance and needless to say she was very impressed. All the flavors melded together nicely and to add an even more meditirranean feel I added some crumbled feta. As suggested, I had cold leftovers for lunch the next day and it was awesome! Great add.
