Uncle Josh's Famous Chicken and Rice
We loved this recipe! Easy and delicious. We used 3 chicken breasts instead of 6 which was plenty - I don't think there would have been enough rice for 6 chicken breasts! We will definitely make it again!!!

Almond Chicken Salad
EXCELLENT! I toasted Top Ramen (2 packages broken up) at 350 degrees for 12 mins, and used that instead of the toasted almonds since it was cheaper. I also added a small can of mandarin oranges, drained. Restaurant quality!!

Beef Stew VI
This was by far the best beef stew! I've tried several others on here, and this was the BEST. And VERY EASY! I changed a few things that made a big difference: First, I coated the meat with onion powder, garlic powder, coarse black pepper & minced garlic (4-5 cloves) before cooking. Then, instead of boullion cubes, I used 3 cups of beef broth, and one cup of red wine. I also added several splashes of worcester sauce, which made a wonderful (slight) change in taste. I doubled the cornstarch/water combo, to make it thicker. Beware of putting the veggies in too early, as I did, and the meat wasn't quite done when the veggies were done. EXCELLENT RECIPE that we can't wait to make again!
