About this Cook
I'm not a professional, but I love to cook and I love to experiment even more!
My favorite things to cook
I love to bake - I just don't get to do it enough. But I also love making pasta dishes and finding unique things to do with chicken.
My favorite family cooking traditions
The only tradition that we have in my family is to be as creative as possible with what we have in the kitchen. We didn't always have the money to go buy the obvious ingredients, so my dad would make his "Dad's Suprise" and it was usually really good!
My cooking triumphs
I'm really good at smelling a spice and telling you what foods it will work with - so I usually start with a meat and sniff around the spice cabinet for what inspires me. So far my favorite creation is a sage dry rub for chicken - sage, paprika, garlic powder - the last two ingredients are my secret!
My cooking tragedies
Okay I've had two major ones. When I was 14, I was experimenting as usual and I was making spaghetti for the family. I love the sweet and savory combo in marinara sauce so I tried to recreate by putting grape jelly in the sauce. Oh it was so gross - to this day my 3 brothers have never let me forget. The other was when I was just starting to date my husband and I make manicotti, but decided to do a sausage and cheese mix instead of just cheese. I ended up using breakfast sausage! I didn't even realize it. But my loving man ate it anyway. It was pretty good, but there was this horrendous maple aftertaste. My two biggest blunders.

Broccoli, Rice, Cheese, and Chicken Casserole
I gave it two stars because it was a good starting point on a better recipe. You're trying to kill us lady! A pound of processed cheese, a stick of butter... OMIT the butter people. It's the most unecessary ingredient. Do not use processed cheese. After cooking this the first time, there were large pools of butter all over the top and in the corners. I coudn't fathom feeding this heart attack to my family so I skimmed off what I could. Second time around was better with some changes. Omitted the butter, used long grain rice (used the rice cooker), instead of onions I followed someone else's advice and used french onion soup mix. Mix that with the milk in a large bowl to dissolve, add two cans creamed soup (i chose cream of broccoli), about 10 oz shredded cheese of your choice (cheddar for me), then add the frozen broccoli and cooked rice. Gently mix until combined then pour over the baked chicken breast (or roasted - just stay away from the processed canned stuff) and bake, covered, for about 35 minutes. Still high in fat and calories, but nowhere near its predecessor and it's a nice indulgence once in a while. Really warms the tummy!

Gluten-Free Yellow Cake
I agree with the adding milk to the rice flour and letting it sit while preparing everything else. That will work beautifully. Other than that - the author mentions "gluten free" baking powder. I can assure you - baking powder IS gluten free. My friend is extremely sensitive to gluten and has zero issues with it. Don't waste money on organic baking powder.

Mocha Coffee Mix
Fantastic. To answer the "chocolate drink mix" questions, think Nestle Quik. Not hot chocolate powder.
