Unsloppy Joes
I also gave this recipe 5 stars because it is hard to find a vegetarian dish that everyone in my family likes. I realized at the last minute I was out of chili powder so I substituted 1/4 t. cayenne pepper and 1/4 t. cumin. Since regular sloppy joes have a sweet undertone I added 1T. honey. After cooking I felt it needed a little more sauce so I squeezed in 2T or so of catsup. I spooned it on the rolls and put a slice of cheese on top and slide it under the broiler. Thanks for the recipe!

Fiesta Frittata Casserole
My family enjoyed this dish. It did take 40 minutes to cook, not the 30 listed. Also, it was very light in texture, not like a frittata usually is. This made the beans sink to the bottom and separate from the egg when served. My family liked the flavor and I will probably make it again with changes. I did not put in the bacon because of vegetarians in the family.

Creamy Macaroni and Cheese
This recipe was made as part of a search for a mac and cheese that my daughter loves from a local store. She said this one was "okay" but not the same taste as the store one. I followed the recipe as written and it did not become grainy at all. It did not reheat well the next day.
