Janet's Rich Banana Bread
I thought this bread was moist, but that it missed something. It could use some dressing up with some cinnamon/nutmeg. If I make this again, I would definitely mash the bananas...purple banana chunks are not visually appealing! I just thought this was a 3 star recipe, but folks at a recent gathering raved, so I'll give it a 4.

Tempeh Kabobs with Moroccan Couscous
I didn't make kebabs, but sauteed the vegetables. I really loved the flavor of this dish, but feel like the recipe calls for way too much olive oil. I used 6T instead of the 8 called for and still felt like the dish was too oily. I would definitely make this again, but would reduce the oil further and perhaps even increase the spices.

Chicken Tikka Masala
Like many other reviewers, I am a huge fan of tikka masala. After making this dish, my boyfriend and I have decided we prefer this version to any other we've had in an Indian restaurant. I did make a few changes. Per some suggestions, I used much less salt (about 1/3 of what was called for). I also substituted 1/2 and 1/2 for the heavy cream, which made the dish lighter while maintaining the richness of the sauce. I added a bit of garam masala and cayenne to the sauce and omitted the jalapeno. Instead of grilling, I cooked the chicken on the stove top in a pan coated with cooking spray. I served this with vegetable korma, brown and basmati rice, naan, and yogurt.
