Hot Pizza Dip

I made this for a gathering at a friends house and it went over pretty well. I wasn't impressed though. It really has to be eaten while it's hot. If the top layer of cheese cools, it's difficult to eat.

Calamari

It was good. But I couldn't get the flour mixture to stick to the rings w/o using egg to make it. How long it is in the oil is SOOOOO important. Not long enough the squid is too rubbery and too long the breading burns. A couple times I managed to get it just right and it melted in my mouth. I wanna say it was 3 min, but it was a while back. I'll have to try this recipe again.... and report IMMEDIATELY.

As others have said, I omitted the sugar and substituted milk for the half and half. A good stand by and CREAMY!

Smothered Green Beans

It's a great way to serve green beans. We loved it! I used frozen whole green beans, and will be removing/returning bacon like others have suggested.

Tuna Noodle Casserole from Scratch

Even though the recipe doesn't require canned soup, it's still pretty easy. Forgot to buy mushrooms and didn't miss them. I used margarine to lower fat and added 1/2 cup cheese to sauce. YUM! No wonder it's the best rated tuna noodle on here!

Garlic Red Potatoes

Super EASY! I made this with kabobs and apple pie for my parents summer 09. The only change I made was to use olive oil instead of melted butter. It was just too good! Can and SHOULD be served all the time!

Mendocino Chicken Salad

I followed the advice of chefsingledad cuz I had chicken breast and liquid smoke on hand, worked great! Just shredded it after it cooled. Maybe it's me but I felt like grape halves were too big so I sliced them horizontily. I used yellow onion cuz it's what I had. Does it make that much of a difference? I have a thing against celery so I used celery seed. And dried basil and sliced almonds... it's what I had. 1/2 cup of mayo was enough! AMAZING!

Hummus III

I think everyone' BEST hummus is different. The ingredients in this recipe are definitely mandatory, but the amounts vary to taste. I add in small increments till it tastes just right. I also blend in the olive oil and parsley. I couldn't find paprika, but crushed red pepper works. Last time I added some jarred red peppers too.

Key Lime Cheesecake I

I love cheesecake and key lime pie, so this one sounded right up my alley. IT WAS! I followed JAMYEARN and used sweetened condensed milk instead of eggs, cornstarch, and sugar. EASY! 1/2 cup lime juice was just enough and whip cream makes it perfect.

Creamy Lemon Cake

WOW! I was leary about how this would turn out and boy was I BLOWN AWAY! This cake melts in your mouth. I used 9" round cake pans and put frosting between the two layers. THE SECOND TIME: I figured there is no reason I can't change the flavors so I did. I used devils food cake, fudge pudding, strawberry jello, and fresh strawberries for the top/sides. AGAIN! WOW! What's next?!

White Chili with Ground Turkey

I made this with leftover thanksgiving turkey but forgot to review it. I worked with what I had so I used 2 cans garbanzo and 1 great northern. I also used cheddar cheese instead of what the recipe called for. Served hot with crushed tortillas on top... AMAZING!

Growing up, my mom worked in a deli and brought home salads daily. I think she made this one too. I love this recipe. It's easy, inexpensive, and refreshing. I could eat a ton. It get's better and better over time, and LOVED the last bite!

Yummy Bok Choy Salad

I cannot say it enough... I LOVE THIS SALAD! It's just a perfect combination of crunch, sweet, salty, nutty, and juicy. I made the salad and then realized it would need to be eaten ASAP. I ate it all in several servings over a 24 hr period... AND WANTED MORE! I didn't see baby bok choy at the store, and wonder if it's more expensive... seriously!

Garlicky Beet Delight
