Banana Crumb Muffins
These were fantastic! I modified the recipe just a bit by adding a splash of vanilla and cutting the sugar down to 1/2 a cup. Since I was using very ripe bananas, the muffins still came out almost but not too sweet. Nice rich, moist banana texture. Thanks!

Jam Filled Butter Cookies
These turned out terrific. I used cherry preserves and decided to add a little bit of fresh lemon juice to the dough to make them a little tangy. I also added a splash of vanilla, a pinch of salt, and a little more flour to counteract the extra wet ingredients. These will be a new addition to my holiday cookie platters.

Easy Mashed Potato and Roasted Vegetable Enchiladas
I'm a vegetarian, but I love to throw parties for a diverse group of friends. This was a great recipe that satisfied the health conscious as well as the "burger and beer" element. It was nice and hearty, and was great with a side of slow-cooked black beans for some added protein. Rave reviews from all, and great the next day as well.
