About this Cook
I was in the food&bev. business for 19yrs.so I have been around food for along time and have learned alot.I love to bake for others & having quest over for dinner is a joy for me.My honey and I enjoy traveling & enjoy the outdoors, camping, biking. I enjoy working in my flowers, and gardening.I enjoy doing crafts of several different kinds.Searching for new recipes and collecting cookbooks is a fun passtimeI enjoy. One of these days I would love to have my own cookbook published.I am a very energetic person & I like it that way.
My favorite things to cook
Baking is relaxing for me,lately I have been getting into Mediterranean cooking.Mexican,Itialian is a fav.also.But the all time favs are fried chicken, meatloaf can't go wrong there.
My cooking triumphs
I think when I was catering was the most exciting time nothing really huge but it was alot of fun, lots of long sleepless nights but to see happy faces & full tummy's that is all worth it.
My cooking tragedies
When I was about 14 or so my family and I was getting ready for Thanksgiving and I was in charge of the pumpkin pies and instead of using sugar I used salt.Thank-god I caught it before we had baked the whole thing.I had to start over I learned a lesson from that one read and dbl.check your ingredients.

Mom's Pineapple-Carrot Cake
3and1/2 stars to me it was alittle dry I would add some extra pineapple maybe some juice I did cut back on the flour because of the coconut, walnutsI added the flavor was good but didn't really taste like a carrot cake maybe more carrots next time.My cream cheese frosting was totally superbed.

Easy Chicken Rice Casserole
This was good a added a few items green chilies, onions, white wine, garlic, celery, broccali, sour cream, and swiss&chedder cheese. And put the chicken breast whole on top of the ,mixture and put slices of swiss cheese and it was very good let the top brown up a little. It sounds like alot but it was stuff that I had in my fridge so I looked at the recipe and went from there. It was a good clean out the fridge meal.Thank-You!!

Mint Chocolate Fudge
very! very! good! You can keep the chocolate warm by warming up a bigger pot with water, and put your chocolate pot inside the bigger pot when you are not using your chocolate and it will keep the chocolate from firming up.You can also use a candy pot which is a double pot for melting chocolate.
