Low-Fat Blueberry Bran Muffins
Wow! These do not disappoint. I followed the recipe exactly and they turned out great! What a great, healthy treat!

Tofu Jerky II
Delicious! It's a sweet and spicy marinade and I thought it tasted really good without the liquid smoke. I used a 250 degree oven and it took over 5 hours, but I think I cut the pieces too thick. I also marinaded the tofu overnight. I can't keep my hands off it, it's so tasty!

Banana Sour Cream Bread
The bread was so delicious! I did make few modifications- I cut the recipe in half and baked in a 8x8 square pan. I used 2 eggs, 3/4 cup sour cream (all I had on hand), a pinch of nutmeg, 1/2 cup chocolate chips (& walnuts), 2 cups whole wheat flour, left everything else the same, and baked at 300 for an hour. After an hour, it was obvious that the temp needed to be higher, so I raised it to 350 and baked about 30 more mins. It was so moist and the crust was just a tiny bit crunchy. My boyfriend and I couldn't stop eating it! Even with the 100% whole wheat flour, the texture was great, almost like it was made with white flour! I will definitely make again!
