About this Cook
I'm 32 years old and have lived in Key West for 6 years now. I cook mostly for me and my boyfriend but my friends love it when I invite them over for dinner! He has a five year old daughter that comes to stay with us for about a week every other month. I work long hours at a resort so often try to do most of my cooking on the weekends.
My favorite things to cook
As of now, I only cook dinner. I love to do slow cooking (but I never use a slow cooker!) I've recently gotten into baking. I love to cook things that can be put in the fridge or freezer and reheated quickly on nights that I don't have the time or energy to be creative.
My favorite family cooking traditions
Home cooking to me is meatloaf, pot roast, spaghetti with meatsauce and Lobster and Alaskan King Crab legs in a red clam sauce!
My cooking triumphs
I'm trying so many new things now that every time something comes out tasty, I consider it a triumph! Also, my boyfriend doesn't eat seafood, tomatoes, mushrooms, peppers, onions and a slew of other things so when I can improvise on a recipe that he enjoys, I say SUCCESS!
My cooking tragedies
There was the time I made Mom's famous meatloaf - put it in the oven and forgot about it for abut three hours. Such a great recipe that I still ate it - just cut off the crispy edges!

Chicken Breast Cutlets with Artichokes and Capers
Very good and so easy to make. I cut the chicken into chunks and added 1/4 cup sundried tomatoes and a 1/4 white wine. Served it over Jasmine rice - a great meal to make after work.

Smothered Beef Short Ribs
This was very tasty. I would cook it longer next time as I prefer the meat to fall apart without a knife. Maybe an extra hour. Tasted great over egg noodles with garlic toast!

Maple Glazed Ribs
FANTASTIC! I've always made ribs with BBQ sauce or rubs - this was a great variation. I used orange juice instead of concentrate. Made it with stir fry veggies and homemade fried rice - no leftovers!
